Mine is biscuits & sausage gravy!
Here is my recipe:
Biscuits:
2 c. flour (self-rising)
1/4 c. shortening
Pinch of Cinnamon
Cold Buttermilk
Sausage Gravy:
1/2 lb. pork sausage
3 tbsp. flour
2 tbsp. real butter
Salt & Pepper to taste
1 1/4 c. milk
For Biscuits:
Heat oven 350 degrees. Blend dry ingredients till mixed, add buttermilk and stir to wet mixture. Knead. Flatten out & use a biscuit cutter to cut each one (floured glass works too). Bake biscuits until they rise and brown.
For Gravy:
Fry sausage until brown. Drain. Stir in butter, salt & pepper, flour and gradually add milk, stir constantly. Boil for 2 minutes until thick.
Serve over biscuits. YUMMY!

Chocolate Croissant Puddings
Serves 6
2 frozen croissants, thawed (I use 3 large fresh ones)
100g dark cooking chocolate, coarsely chopped
4 eggs
2 cups milk
1/2 cup caster sugar
Strawberries, to decorate
Hot Chocolate Sauce:
200g dark cooking chocolate, chopped
3/4 cup cream
1. Grease 6 oven proof dishes - 3/4 cup capacity (I just use a casserole dish and put it all in there). Place on an oven tray.
2. Cut croissants into thirds. Place 1 slice in each dish. Top with chocolate.
3. Whisk eggs, milk and sugar in a bowl. Pour into dishes. Stand at room temperature for 30 minutes.
4. Cook in a moderate oven (180'C) for 30 minutes, or until puddings are just set and golden brown.
5. To make sauce, place chocolate and cream in a small saucepan. Stir over low heat until chocolate is melted and mixture is combined.
6. Serve with hot chocolate sauce and strawberries.

I find every time I am feeling low, that I will turn to chocolate as being my comfort food. I find it seems to calm me down for a bit & make me forget about things for a while.. It also gives you a natural high like no other.. It makes me feel good at least for a tiny bit.. Which is better than nothing! . . I know I usually end up baking chocolate chip cookies when I want some form of chocolate. So I included it below in-case anyone would like to make them sometime when they get a chocolate craving.. They are rather yummy indeed I find! . .
"Chocolate Chip Cookies."
Ingredients:
- 1/2 cup of butter
- 1/2 cup of shortening
- 3/4 cup of packed brown sugar
- 1 egg
- 1/2 cup of white sugar
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 1 1/2 cup of chocolate chips
- 2 cups of all purpose flour
Directions are as follows:
- Preheat the oven to 350 degrees F.
- Then combine the flour, baking soda, & salt in a large bowl. Then in another bowl, combine the softened butter with the shortening, sugar, & brown sugar, as well as the vanilla extract. Then beat until creamy. Then beat in the egg. Then gradually slowly add the flour mixture & then mix well. Then at the end stir in the chocolate chips.
- Then bake on an ungreased cookie sheet (I always grease my cookie sheets though honestly.) But bake the cookies for 8 - 10 minutes. My personal note: I always take them out before they turn dark though. Because then they are much softer. And if you leave them to harden then they still are soft in the middle.
I personally love chocolate chip cookies but they can be rather rich . . But are great if you are looking for a late night snack to satisfy your chocolate craving . . Just in moderation I guess, though it sometimes is difficult to resist the urge.. haha.

can chocolates qualify? i love chocolates, and for me, nothing beats chocolates, in terms of giving me "comfort" after a truly hectic and stressful day.
the recipe? hmm... cocoa powder, sugar, and milk? lol! i'm not sure! i'm not a cook, i just love to eat, samsonskola!

My ulitmate comfort food is Kraft Mac and Cheese. Yes, would you believe that little blue box of "It's the cheesiest" is my comfort food? ha ha
But my comfort food is not necessary after a long work week. It is necessary when I am really sick though. Which, doesn't happen that often.
The last time I really needed it, I cried about it. LOL
Let me explain...
I became really ill and my partner thought it was all in my head. But once he realized that I had a 103 temp and was shaking because I was so cold, he knew I was really ill. So, he took me to the hospital. And the next day while I was still in bed ill, he actually made dinner! He tired to remember my favorite things to eat. I think he was trying to make up for not believing how ill I was (meningitis). But when I did drag my shaking butt out of bed to go eat when he called, I looked at what he made and cried. LOL
I cried for two reasons. At first I started crying because I just really really REALLY wanted Kraft Mac and Cheese...and as soon as I started crying because of that, I started crying more because I was being so ungrateful for all the trouble he went through to think of all the things I like! Chicken, oraka cooked in diced tomoatoes, rolls, and the anti-pasta with artichoke! We have been together long enough that he knows what I like on a normal day. And I had thought that he knew what I need on a really bad day. But he went through so much trouble fixing the meal to make me feel better. LOL
In the end, I apologize for being so ungrateful and took my plate back to bed with me. And 20 minutes later, he walked in with a HUGE bowl of Kraft Mac and Cheese!!!! :)

I think potato chips are my comfort food. It is probably the worse thing I could eat too, since it is so fattening! When I am sick though I ALWAYS want a butterfinger, which makes me feel better. I am not a chocolate or sweet eater, but I do like a butterfinger when I feel bad.

For me, my comfort food wud be a bar of Cadbury's fruit and nut chocolate. It releases all the stress i hold thro'out the week.

wow, favorite comfort food, that's a tough one. i suppose pasta with a nice tomatoe sauce is my all-time favorite. easy red sauce recipe:2 cans of stewed whole tomatoes, good quality
1 clove garlic, sliced thin
.5 of a small onion, diced
.5 of a small carrot, grated finely
aprox 3 tablespoons of extra virgin olive oil
fresh oregano
in a large, heavy bottom pot, heat the oil til nearly smoking, add the onion and garlic and a large pinch of salt. the salt gets the garlic and onion sweating, which will prevent them from burning so easily, saute until the onion is translucent. at no point do you want the garlic to take on any color. next add the grated carrot and a small pinch of salt, you may need to add a little more oil at this point. saute for another 5 minutes. next, hand crush the whole tomatoes without adding the sauce. saute until the sauce reduces by half and loses most of its water. then add the fresh oregano and the rest of the tomato juice from the cans. simmer for an hour or more depending on the desired consistency of the sauce. season to taste with salt, pepper, crushed red pepper.
