Philippine occassions will never be the same without the famous lechon. I can always remember people wishing for a lechon during parties here in Philippines.People usually go to this dish and wish to grab a bite for this tasty food. How bout you, do you also like to eat lechon during gatherings and occassions?. What part of lechon do you wish to eat?.

hmmm... lechon always the star dish in almost every party, fiesta or any other occasion here in the philippines. but i must share with you guys a receipe that my dad gave me before he passed away. it's called pritchon sa patis or fried lechon in fish sauce. hmmm sound's interesting.. ok here's how it goes. get a least 1 kilo of lechon always tell the person selling to add more skin lol. add at least 3 teaspons or 2 1/2 table spoons of patis or fish sauce any brand will do. pour over lechon and mix well. i recomend the rib section as it has more tender meat and less fat or the back of the neck for more meat a a bit of fat. pls chop the meat or have them chop it for you into at least 1/4 inch thick. 1 inch thick lechon meat doesnt get the fish sauce inside the meat. now fry meat almost to a crisp but not to chicharon or pork grinds style, make sure that the skin becomes crunchy leave the skin as desired cut a you wish, at least in a estimated time of 5-15 mins frying you will smell the fish sauce while frying dont get discouraged. its normal, i recommend cebu lechon coz it is the best to do this with and very tasty, so you dont need to much fish sauce and no need for sarsa or liver based sauce. and tadah pritchon it taste like bacon but lechon hmmm! my family was doing this when we had leftover's from lechon. i dont know its just probbly we got so used to eating paksiw lol. but ofcourse paskiw still good. goodluck and enjoy.

If I hadn't read the responses I would not have known what a Lechon was I was getting ready to look it up. I don't ever recall having a lechon at any party I have ever been to, but from the sounds of it I have been missing something pretty amazing and delicious. Maybe one day I will also get to try lechon and enjoy it.

No gathering would be completed without the essential lechon. It's also the first dish that I try to find in every party. The fist one that I go to in a dinner table, like most people, making it seem like a race on whoever gets to get the first lechon slice. hehe.. The part that I always look forward to taking a bite of when it comes to lechon, would be those pieces of meat that are closest to the ribs, the part that's rich with the flavors that comes from the stuffing. yum,yum..

It's really funny how people reacted to Lechon ,but what you said really happens. It's indeed a race or else you will never have a chance to taste of it if your that slow.

lechon for the crunchy skin . . . then ribs with mang tomas salsa and Puso or what we fondly call hanging rice ! even with only lechon is on the table with rice or puso then the crowd be calling it a party already . how i wish we can buy lechon also here in U.S. at a per kilo basis like what we did there in Cebu that anytime we crave for lechon it's available for lunch or dinner time. . . that's what we are looking forward of going home to cebu for lechon 'coz we don't have lechon in our place here in US unlike to NY , NJ or California that there are lots of pinoy stores & pinoys around too.
