What do flowers symbolize in a relationship?

Valentines Day is less than a month away and i was thinking what my bf and i can do to make it special. then this thought crossed my mind and i have to ask your opinions about this.We all know that guys usually give flowers to their girlfriends or wives during valentines day or birthdays or in some other special occasions. but what exactly do flowers symbolize or mean? Do they really represent the love of the guy who gives them or are they just a "thing" guys use to please the girls? How about us girls? what do we feel and think when a guy gives flowers to us?

White Roses - symbolizes purity, innocence and serenity.
Yellow Roses - symbolizes friendship and happiness (as are all yellow flowers)
Cream Roses - associated with charm, grace and thoughtfullness.
Lily - purity also
Sunflowers - associated with haughtiness
Tulip - symbol for fame
Violets symbol for modesty

Recently, I found an article about the meanings of flowers. Every name of the flower have different meaning, even rose have different meaning based on their colors and how many rose you give has their own meaning too. It's too complicated and I've already forgotten the meanings.
I think men give flowers to the women, because they want to express their love and they find flowers are good enough to show their feelings, and they also know that women loves flowers. (many of them loves it)
When I received flowers from my boyfriend, i felt really happy and flattered =)
I dried the flowers, and I still keep it until now ^^
