I don't know if you are looking for Pineapple Upside Down Cake or another type of pineapple cake. But here is one of each. I hope your Mom enjoys her birthday. I know she will love the thought you put into making her cake.
Pineapple Upside-Down Cake
1/2 CUP BUTTER, MELTED
1 CUP BROWN SUGAR
1 SMALL CAN SLICED PINEAPPLE, DRAINED. SAVE JUICE.
10 MARASCHINO CHERRIES, STEMS REMOVED
3 EGGS, BEATEN
1 CUP SUGAR
1 CUP SIFTED ALL-PURPOSE FLOUR
1 TEASPOON BAKING POWDER
1/4 TEASPOON SALT
5 TABLESPOONS PINEAPPLE JUICE
In a heavy cast iron skillet, blend in melted butter and brown sugar.
Arrange pineapple slices thru-out the skillet. Place cherries in
pineapple slices. In large bowl, mix other ingredients well. Pour over
pineapple mixture in skillet. Bake in 350 degree oven for 35-40
minutes. Cool completely in skillet and turn upside down on a nice
plate.
This recipe is old as dirt, but it's a delicious quick dessert. Extra
special served warm with a little whipped cream on top.
Pineapple Cream Cake
2 eggs
1/2 c. shortening
2 c. white sugar
2 c. all purpose flour
2 tsp. soda
1/4 tsp. salt
1 can crushed pineapple
Blend eggs, shortening and sugar until creamy. Add dry ingredients to
creamed mixture along with the pineapple, (do not drain pineapple). Mix
well and bake in floured and greased 9-1/2 by 13-1/2 size pan at 350
degrees for 35 to 40 min.

i found a great recipe of pineapple cake,hope your mom's birthday be a sucess!:)
INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
2 eggs
1 1/2 cups white sugar
1/2 teaspoon salt
1 (20 ounce) can crushed pineapple with juice
3/4 cup butter
1/2 cup white sugar
1/2 cup evaporated milk
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch pan.
Mix the flour, baking soda, salt, and 1 1/2 cups of the white sugar together. Stir in the beaten eggs and the pineapple with juice and mix well. Pour batter into prepared pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Pour Buttery Milk Syrup over top of cake while still warm.
To Make Buttery Milk Syrup: In a sauce pan combine the butter or margarine, evaporated milk, vanilla, and 1/2 cup white sugar. Bring mixture to a boil over medium high heat and cook for about 5 minutes. Pour over cake while still warm.

If you want easy way to make a pineapple upside down cake you can just buy a box of your favorite cake mix. follow direction on box. when putting the cake together add lots of butter to the pan place about 1/2 cup of brown sugar in bottom of pan press firmly into the pan place whole round sliced pineapples in the bottom of the pan arranged place a cherry in each center of the pineapples. Bake according to direction on box.

JUANITA'S "MOIST" PINEAPPLE CAKE
Mahalo to Juanita Harris (long-time listener) from N.C. who sent this to us and
says, " you can't have a good party without THIS cake!!!"
1 box of Duncan Hines Butter Yellow Cake Mix
1 Can crushed pineapple (regular size)
Drain Pineapple and keep juice
Make cake mix (according to directions)
and put in 2 8" or 9" cake pans.
Cool for about 1 hour
Turn first layer onto a cake plate and use a toothpick to punch holes in the first layer. Use a teaspoon to saturate this first layer with 1/2 of the Pineapple juice. Cover this first layer with the "7 Minute Frosting" listed below and spread 1/2 of crushed pineapple
on top of the frosting.
Place your second layer on top of first and once again punch holes in the layer with a toothpick. Saturate the second layer with the remaining pineapple juice, cover the layer with "frosting" and add the remaining crushed pineapple.
THEN take the rest of the frosting and cover the entire cake!
You know have a completely WHITE CAKE with the hidden pineapple surprise!
7 MINUTE FROSTING
11/2 cups of sugar
2 egg whites
1 teaspoon - white KARO syrup
1 sprinkle of salt
1/3 cup of water
Mix all ingredients in top of double boiler. Be sure water is boiling in bottom of double boiler. Using an electric hand mixer, beat ingredients. (Make sure water in bottom is boiling at all times.) Beat for 7 MINUTES - (thus the name)
on high until high and fluffy. Add 1/2 teaspoon of vanilla extract and beat until mixture stands alone when pulled up with a knife.
Refrigerate to set and IF there is any leftover after the party...store in refrigerator.
Do NOT cover tightly as the frosting will spoil!

try it my friend:
PINEAPPLE CAKE
1 box butter recipe cake mix
1 20 oz. can crushed pineapple, drain and reserve juice
1 3 oz. box instant vanilla pudding
1 8 oz. container Cool Whip, chilled well
Prepare cake mix according to directions. After cake cools, pierce cake with fork several times. Pour reserved pineapple juice over cake. With an electric mixer, beat Cool Whip and box vanilla pudding at medium speed until set. Stir in crushed pineapple. Frost cake with icing and enjoy.
