Does anyone still do home canning?

I do. I can applesauce, salsa, tomatoes, tomato sauce, pears, beets, jellies, venison and a lot more. It is a lot of hard work, but I love to look at the jars all lined up and so I did that. I get a great deal of satisfaction from it. It saves money too and I know exactly what my family is eating.

I used to can a lot. It got to the point though, where buying a bushel of this or that was so expensive, that buying processed foods was a cheaper. I used to can preserves, beans, tomatoes, salsa, pickles, and just freeze peaches and corn. Now, I only can tomatoes, when my small little garden produces enough to mess with.
Your post reminded me how much better for you, and tastier, home canned foods are than the overly processed foods sold in stores. I know I would much rather use my home canned tomatoes in my cooking than the store bought ones. I still have hundreds of canning jars laying around, so I may just get back into it.

Tomato and apple sauce. I can market them to relatives and friends and make money.

I can tomatoe juice and tewed tomatoes, but that is all. We use alot of it, so it aves us quite a bit.

Both my mother and my grandmother still can food and share it with me and my family. I have not yet tried canning myself, but now that I'm not working full time I may give it a shot.

I've never done it but have always wanted to. My dad canned a few things this past summer and after he was done told my mom "Well now I see why you freeze everything" LOL
It's a ton of work for sure!

Every February (mid to late summer here in Australia) we make hundreds of bottles of tomato sauce - which is basically tomato puree. My parents in law have the set up in their garage and the rest of the family take it in turns to help depending on who it's for. This year we made 200 large bottles for us and abut 50 jars. Should keep us going for the year :) I use the puree for pasta sauce, curries, casseroles, anything. We also do a few jars of peeled tomatoes but haven't got round to that this year.

Well I try my hardest-- Each year we can tomatoes, beans, pickles, and club sauce-- Some years they turn out better than others- We have switched to freezing alot of stuff- Corn, beans, peppers..
I too love to look at what is done and go wow! we did that- My fiance and I can together so its a great bonding experience!

Oh yes, I still home process the food that we eat. I do not use a pressure canner too much though. I can it outside in my tub. I can can 27 quarts at a time. I can everything from deer meat to veggies and fruits. I make speghetti sauce and apple sauce etc inside on my stove. I also make my own homemade mixes for most of my cooking needs. We are country as country can be. Iam very concerned with the additives that is in food. Most commercial mixes and foods have MSG and preservatives among other things. We do not use MSG at all and do not need all those additives. Homemade is best by far!

Yes . I do and I love to do it. I made applesauce, applebutter and apple jelly this year plus some red raspberry and blackberry jams. I had a problem with my apple jelly not setting but I have been using it as a syrup ...LOL Its good too. I have just gotten a good collection of jars so now I tend to can a little more

Based on my experience it is most likely not enough pectin.
Or an imbalance between the acid and pectin. Adding a little lemon juice will help the pectin.
My Grandmother also taught me that is could be too much humidity in the kitchen or it was boiled too long.
