Filipino's Chicken and Pork Adobo
1 cup white or cider vinegar 1 cup water 2 tablespoons peeled and crushed garlic 1 teaspoon salt 3 bay leaves 1 teaspoon black pepper 3 pounds of chicken (large pieces or hacked small) 2 ½ pounds pork butt cut into 1 ½ inch cubes 2 tablespoons soy sauce 2 tablespoons peanut oil (optional) ¼ cup of red wine (optional) hot sauce or dried hot peppers (optional) 1/2 cup to 1 full cup of brown sugar (optional)
You can use either your favorite chicken pieces or "hack" one whole chicken. In a large pot bring to a boil the vinegar, water, garlic, salt, bay leaves, hot pepper, and black pepper. Add the cut up meat cover with the brown sugar and once again bring to a boil. Lower the heat and simmer covered for 30 minutes. Add the soy sauce and the wine and cook an additional 10 minutes. Remove the meat and continue cooking the sauce until it is reduced by half. While the sauce continues to cook, you may want to brown the chicken and pork pieces in a hot skillet with the peanut oil. If you used large chicken pieces (ie leg quarters) skip this step. Serve the meat and the sauce over white rice.

INGREDIENTS:
3 pounds oxtails
2 pounds beef tripe
1 yellow onion, peeled and sliced
3 cloves garlic, peeled and crushed
1 tomato, chopped
1-1/4 cups beef stock homemade or use canned
1-1/4 cups water
Salt to taste
2 tablespoons annatto oil
3 tablespoons peanut butter mixed with 1/2 cup hot tap water
Several shots of Tabasco, or more to taste

I have quite a few favorite recipes that I enjoy making.. So it was quite difficult to choose just one.. But I came across one in my little recipe book that I have so I included it below in-case anyone is interested.. ENJOY if anyone of you end up deciding to make it some time! . . xx
"Three Cheese Chicken."
Ingredients are as follows:
- 1 small onion, chopped/diced
- 2 tablespoons of butter or even margarine
- 2 cans of cream of chicken soup
- 1 (8 ounce) jar of mushrooms
- 1/2 teaspoon of dried basil
- 1 (8 ounce) package of egg noodles, cooked but also drained
- 3 - 4 cups of cooked bite size pieces of chicken
- 2 cups of grated cheddar cheese
- 2 cups of cottage cheese
- 1/2 cup of grated parmesan cheese
- dried bread crumbs (but these are optional)
Directions are as follows:
- In a large sauce pan, saute the onion & the pepper in the butter/margarine until they are tender.
- Then remove from the heat & then add the soup, the mushrooms, & the basil. Then set a side.
- Then in a separate bowl, mix the noodles, the cheddar cheese, the cottage cheese, & then the parmesan cheese.
- Then pour the soup mixture over the noodles & then combine well. (The amount of the soup mixture can be adjusted if you personally want the casserole to be more or even less saucy.)
- Then pour in an greased 9x13 inch baking dish. Then bake uncovered, on 350 degrees. for at least 45 minutes. Or at least until it is bubbly.
- Then sprinkle with the bread crumbs, only if desired though. Then bake for 10 minutes longer.

Squid Adobo
Ingredients:
* 1 Kilo squid * 1/2 cup water * 1 cup white vinegar * 1 teaspoon peppercorn * 1 pinch of salt * 1 head garlic (roughly chopped) * 1 medium onion (roughly chopped) * 3 pieces tomatoes (diced) * 1/2 tablespoon sugar (optional) * 3 tablespoons oil
Procedures:
Wash and clean squid well, making sure the black tint does not burst as it will give bitter taste. In a deep pan, bring the water to a boil along with the squid, vinegar, pepper and salt until squid is cooked. Take out the squid, set aside. Strain the sauce, set aside. In another pan, saute' garlic, onion and tomatoes. Add the squid and pour the rest of the sauce. Add sugar if desired and allow it to thicken or be a little dry in consistency.

Paksiw (fish pamapano)
I love paksiw especially pampano. Just by thinking about this im starving already lolz..
The Recipes:
4 pounds or 1 kilo of fish pampano
2 peeled crushed garlic,1 cup white vinegar,3 tablespoons vegestable oil, 1/4 cup of fish sauce, i whole piece dice onion, dried pepper(optional) 3 tablespoons white sugar, eggplant. (optional)
Cooking time: :) First heat your pan into 200 degrees and put the veg. oil until is hot then start putting the ingredients, garlic, onions,vinegar then put the fish until and the vegetable should be steam already so, when the fish already color brown it means already cook then put the fish sauce and the sugar, pepper(optional) then the steam vegetable...(cha3x you got a paksiw in 20 minutes:)

This is my best meal my husband and our friend fight over he is going to get seconds like little kids.
Chicken casserole
1 1/2 pounds of chicken,1 can of cream of chicken, 1 cup of cook rice, 3/4 cup of mayo, 1/4 cup of water, 1 1/2 to 2 cups of crush potatoes chips.
Cook the chicken at 350 for 30 minutes.
Then chop it up into cubs. mix it with all ingredients but chips. Then put it in a 8x12 casserole dish and sprinkle the chips on top until the chips cover the whole top. cook for 15-20 more minutes or until chips are golden brown.

Cocoa Drop Cookie

Ingredients:
1/4 cup butter, softened
1/4 cup shortening
1 cup sugar
1 egg
3/4 cup buttermilk
1 teaspoon vanilla
1 1/4 cup sifted all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa powder, unsweetened
1 cup chopped pecans
Preparation:
Cream shortening and butter with sugar; beat in egg. Stir in buttermilk and vanilla. Sift dry ingredients together then stir into the first mixture. Stir in pecans. Chill cookie dough for 1 hour.
Bake in preheat 400"F oven from about 8 - 10 minutes, or until set. Cool and frost with a simple chocolate or vanilla icing if desired.
Makes about 2 1/2 to 3 dozen cookies.

Here is something really easy to fix and you would be suprised just how good they are. Great for kids to help with too.
Grandma's Easy Biscuits
Just one word... outstanding! Reminiscent of Almond Roca.
Lay 24 Saltines side by side in a cooking sheet.
Heat until dissolved:
1 cup brown sugar
1/2 cup butter
Pour over the Saltines and bake at 230C (450F) for 4 minutes.
Cover with 170 grams (6 oz) chocolate chips, melt and spread.
Sprinkle with chopped nuts (almonds, walnuts, pecans, whatever) and let sit at room temperature.
They are absolutely delightful. Great for easy bake sales, after school snacks, parties, showers and get togethers. I had them at a family reunion and everyone was talking about them, they were a big hit.

mix all the items using egg AND curd dont use water...
mix thge chicken and wait for 1/2 an hour..
and fry it nad its very tasyy
