I just took a dessert out of the oven. It uses a boxed cake mix.
1 15-oz can pumpkin
1 12-oz can evaporated milk
3 eggs
1 cup sugar or splenda
4 teaspoons pumpkin pie spice
1 yellow cake mix
1 cup chopped nuts
3/4 cup melted butter or margarine
Heat oven to 350 degree. Grease bottom and sides of rectanglular pan.
In large bowl, stir together pumpkin, milk, eggs, sugar and spice. Mix until smooth. Pour into greased pan. Sprinkle cake mix over top. Sprinkle on nuts and pour melted butter over top. Bake 50-60 minutes or until knife inserted comes out clean. Cool completely before serving.

Now that's something I don't think I have ever seen .. canned pumpkin !!
hang on .. I'll just go and check my online supermarket .. nope !! Nothing there remotely like canned pumpkin or pumpkin pie spice, now that's a shame as the resipe looks very tasty .. as all your recipes do .. botheration .. and I quite fancied having a go at this recipe too !!

You could make your own cooked pumpkin and add spices to it. I will look for a recipe for the spice for you.

Thanks for the recipe. I found it strange that you put the cake mix on top. I would have thought that you mix it together with the other ingredients. Now I am curious and I want to try it.

YUM! sounds awesome, except for the splenda...I'm allergic to it;sad, huh? So, I'd have to use regular sugar.....otherwise it sounds very good:)

Thanks so much for this recipe. My daughter loves pumpkin and will make it for her. Probably for her birthday. It will be such a treat for her! We also grow pumpkin and this will help to give us another way to use them in a yummy way!
