Do you Like Bok Choy? How Do You Use It? Recipes?

I made a soap using bok choy (one of Rachael Ray's tweeked with some of my additions) and my daughter and I loved it. Do you like bok choy and how do you use it? This vegetable is new to me and this was the first time eating it.

Bok Choy Salad SUBMITTED BY: Susanne "This wonderfully crunchy salad has a great taste and wholesome appeal!" INGREDIENTS * 1 medium head bok choy, diced * 1 bunch green onions, chopped * 1 (3 ounce) package ramen noodles * 1/2 cup blanched slivered almonds * 2 tablespoons sesame seeds, toasted * 1/3 cup olive oil * 3 teaspoons lemon juice DIRECTIONS 1. Combine bok choy and green onions; cover and chill. 2. Whisk together the olive oil, lemon juice and ramen noodle seasoning packet. Refrigerate until chilled. 3. Break ramen noodles into small pieces; combine with toasted almonds and sesame seeds. 4. Before serving, combine the cabbage mixture and noodle mixture; add dressing and toss to coat. NGREDIENTS * 1 teaspoon peanut oil * 3 tablespoons minced shallots * 2 carrots, sliced diagonally * 1 cup fresh green beans, cut into 1 inch pieces * 1 cup chopped bok choy * 1/3 cup low sodium, low fat vegetable broth * 1 tablespoon light soy sauce DIRECTIONS 1. Heat the oil in a wok or skillet over high heat. Add the shallots and saute for 3 minutes. Add the carrots and stir fry for 3 minutes. Add the green beans and stir fry for 2 minutes. Add the bok choy and stir fry for 2 minutes. Add the broth and simmer for 2 minutes. Add the soy sauce and serve.

OH! I love it! I make a chicken soup with carrots..add pea pods, some won tons and water chestnuts and at the end, when the carrots seem good and soft, the last 5 minutes I add the bok choy and turn off the heat. Served over egg noodles, it is GREAT! (sometimesI even toss in some cubed zucchini toward the end!) Also, Moo Goo Gai Pan is on most online recipe sites! That's great over rice!

I love it in Chinese vegetable soup. It's just bok choy, carrots, broccoli, and pea pods in a broth.
