Sweet Potatoe and Onion Soup

Try this yummy and healthy soup this winter!
Onions reduce lipoprotein and cholesterol helping to lower blood pressure.
1kg sweet potatoes
2 large onions - sliced
2 garlic cloves crushed
2 carrots - diced
5ml vegetable oil
1l vegetable stock
225ml natural yoghurt
Saute all the veg together in the oild for 5 minutes - be careful not to burn any.
Add the litre of veg stock and gently bring to the boil
simmer for about 25 minutes until veg is fully tender
blend together with a hand blender or liquidiser
bring back to the boil, add the yoghurt and add a little corrianer as a garnish
eat it all up - yummy!

This sounds really good. I will add thi sto a must make recipe list. As I love sweet potatoes. I have never trie dthem in a soup yet. Thanks.

Although the wrong time of the year for me to be thinking about soup Rainbow, I have taken a copy of it and will give it a go in the winter. Okay, so it is months off yet but still it will be a change and something new for me to try, as long as my husband doesn't know about the yoghurt in it. He will tell everyone that it is disgusting and he doesn't eat it, but he hardly knows what I add to things. LOL
It sounds different and interesting, and thank you for sharing this recipe with us. The thing that appeals to me most about it is that it reduced cholesterol and helps to lower the blood pressure. The first is okay but the second one isn't so good, so anything that will help I will give a try. :)

wow no way i love soup and it just so happens that its snowing outside lol so i think its time to bring out the pots and pans and start and i am definatly going to try your recipe i have it written down on a piece of paper right now and when my troops all get up im gonna have a trip to tescos and get all the nececities to make it :)
Thanks a bunch lol i have one question though do you have to blend it as i like my veg to be chunky in soup ?? ill maby try it without the blending ill keep you posted as to how i get on.

We are snowed in here today! Yep, the kiddo and I are both at home, it is snowing heavily, and extremely cold. I have all the ingrediants to make this soup, and I think I will give it a try a little later this afternoon. Thank you!
