I am looking for the ultimate peanut butter cookie recipe.
The ones I've tried so far have been a bit too dry for me, and really not working for what I want. But my husband loves peanut butter cookies, so ... I need to find a recipe that works!
They can have things in them (chocolate chips, nuts, whatever) - just has to be the best peanut butter cookie you've ever had.
Much thanks :)

2 1/4 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 pinch of salt (sorry for the vague term. less than 1 tsp)
1 1/2 cups peanut butter
1 cup stick butter (do not melt! allow to get soft)
1 cup sugar
1 cup brown sugar
1 tsp vanilla
2 medium to large eggs
blend flour, baking soda, baking powder, and salt in a small bowl. Set aside. Mix peanut butter, butter, sugar, brown sugar, and vanilla in a large bowl. Beat mixture until creamy. Add eggs and mix well. Gradually add flour mixture. Roll dough into small balls and place on cookie sheet 1/2 inch apart. Smash with a fork, for decorative purposes :) Bake at 350 until cookies are light brown.
you can add nuts, chocolate or anything after you add the dry ingrediants to the wet ingredients. If too dry, cut back on the amount of flour, but try this first. I don't eat peanut butter, but everyone always asks me to make these. Apparnetly they are good! Recipe came from some peanut butter jar.

I saw this recipe recently on Food network and tried it immediately because it is very easy and has only 4 ingredients and is also diabetic friendly. It was simply delicious!
Magical Peanut Butter Cookies:
1 cup peanut butter, creamy or crunchy
1 1/3 cups baking sugar replacement (recommended: Splenda)
1 egg
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.
Hope you like it.. I loved it!

Nope, there's no flour, that's the best part..I was surprised too and wasn't satisfied till I tried it myself! Its made only with peanut butter and it tastes good. I of course used regular sugar instead of Splenda and also used creamy peanut butter.

I wouldn't lie to you - these are absolutely the best peanut butter cookies in the world. I don't share this with anyone, but I assume you won't sell my closely guarded secret. ;) They're very soft when they come out, so you'll want to let them cool a bit on the cookie sheet before removing them. It also makes a TON of cookies, but I don't like trying to measure out portions of an egg.
Ingredients:
2 1/4 C flour
1/2 tsp baking soda
1 C brown sugar
1 C white sugar
1 C butter
1 egg
1 C peanut butter (plus 2 T if you like the peanut butter taste)
2 tsp vanilla
1/2 tsp cinnamon
Directions:
Preheat to 300F
Combine the sugars and cream in the butter in a large mixing bowl.
To the same bowl, add the egg, peanut butter, vanilla, and cinnamon. Mix them together well.
In another large bowl, sift together the flour and baking soda.
Mix the two together. It may be a little difficult - use your hands if you need to, and coat them with a little flour first so the peanut butter doesn't stick.
Roll the dough into teaspoon-sized balls. Sprinkle the tops lightly with sugar and press with a fork in a crisscross pattern.
Bake for ~12 minutes. There should be very little colour change, and the cookies should be soft.

I am not much of a cook- and all these sound like great recipes-but all I have to offer is a website you can check out if you havent heard of it-I look for alot of recipes on it-it is called epicurious.com Also-my dad bought a huge box of cookie mix at Sam's Club and those were good-I dont like hard cookies either-so when I bake cookies I tend to leave them not all the way done-just very lighty brown. Isnt that why you dip Oreo's in milk-to make them soft? Who wants hard cookies?

The peanut butter cookies that I end up baking quite often.. I have found to not only be moist, but just have such a great taste to them.. You can really taste the peanut butter from the cookies & every time I end up making these cookies.. When we have company over people will want to actually take some home with them because they are just amazed at how wonderful these cookies taste. Within two - three days they are honestly all gone. And I've made 2 batches before so that is indeed a lot of cookies for one to go through..
I recommend these ones if you like moist cookies, that are full of flavor! I find if you allow them to cool & harden slightly that they taste even better.. As if you end up having one right after baking them they tend to not only fall apart.. But they also can be to over-whelming since the peanut butter taste is rather rich when just eating them after they are baked. If you end up trying this recipe I hope your husband, as well as everyone around you enjoys them as much as we do within our household! . .
"Peanut Butter Cookies."
Ingredients are as follows:

- 2 eggs
- 1 egg yolk

- Then add the eggs, the yolks & the vanilla & mix until fluffy. Then stir in the peanut butter.
- Then stir the flour, baking soda & the salt in to the peanut butter mixture. And refrigerate the rough for at least 1 - 2 hrs.
- Preheat your oven to 350 degrees F. (175 degrees C.) Lightly grease a cookie sheet as well.
- Then roll the rough in to walnut sized balls. And place on the prepared cookie sheet & flatten slightly with a fork. Bake for 12 - 15 mins in preheated oven.
- The cookies should look dry on top. Allow to cool for a few minutes on the cookie sheet before removing to cool completely on a rack. These cookies taste great when slightly undercooked I had found. ENJOY! xx
