Easy Creamy Rice Pudding

Try this easy Baked Creamy Rice Pudding
3 Tblspoons short grain rice
1 Tblspoon sugar
60ml (1pint) milk
15g (1/2 oz) butter/margarine
grated nutmeg
1 Tblspoon cream or evaporated milk
Place rice in buttered pie dish. Add sugar and milk and stir well.
Add butter in small pieces and top with grated nutmeg.
Bake in slow oven (160c-325f) and stir every 30 mins. After stirring the third time add cream or evaporated milk and leave to brown nicely.
Serve with cream or jam.
You could add some sultana's or raisins if you wanted, I dont like them so dont add them.

OK..now you made me hungry! I use the same recipe with one exception...I add a pinch of Saffron. It is sooooo good! I don't like the raisins eather..thanks!

You know I only just seen a recipe the other night in one of my baking books which suggested saffron in a cake. I'd never have thought of it, but putting some in the rice cream, that sure will be something different, I really want to see how that goes.
Although I have saffron in the cubboard Ive never used it (I always by pass it oops), Ive also heard that when using saffron you only need a few strands, am I correct in saying that or would you use a pinch like you would if it was a recipe calling for salt?

hehe Im lucky, with 3 chef's in the family and myself working as a part-time cook, I get alot of nick alot of special ingredients for nothing :o)

Hey thats a really cool idea for sure, Im going to try it in the slow cooker. Cheers for the idea....
Im sure where there's a will there is certainly a way to snitch some outta the cooker while its a cookin :o)
