healthy substitutions or techiniques in cooking

here are some things that i do to make my recipies healtier:
- unsweetened applesauce instead of oil in almost all of my baking- keeps it just as moist but cuts down on fat.
- wheat flour mixed with white flour for cookies and stuff
- oat flour (grind up oatmeal!) and wheat flour to make bread instead of white flour
- half the sugar - esp. if you are using apple sauce
- non-fat milk/cream/ half and half
- lower fat mayo and cream cheese taste just the same as the full fat versions
- I have a spray canister to spray butter - all of the flavor without using tons and tons of butter - this is especialy great for making baklava - tastes just the same but you can use almost less than HALF the butter
- turkey meat instead of beef - i got this from a cook on another forum - turkey is cheaper too!

I use olive oil instead of vegetable oil for a lot of my cooking, because studies suggest that olive oil can actually reduce the risk of heart disease. Also, when I make scrambled eggs, I generally use two eggs but only one yolk. I feed the other yolk to my cat. She's happy, and I'm getting a lot less fat and cholesterol, and the scrambled eggs don't taste any different. I also tend to use a lot of herbs for seasoning, instead of salt. Lower sodium, and better flavor!

you really put a great tips here.. i already noted them down prior responding ;-)
mine tip is i add water instead of milk/cream in the cake batter. and my cake turned out just great. no change in taste and you cut down on extra calories too.
i also use more then half quantity of whole wheat rather then just add all purpose flour.. it also add extra lustre and tastes just great even better then all purpose flour cake.

Cooking Techniques
Get Firm on Tofu:
Freeze tofu or gently press the water out to make it firmer. If you like, you can marinate it prior to cooking for more flavour.

Use baking instead of the frying.Cling is better because it does not require any oil and hence it is good for health.For patients with high sugar levels cholestrol free sweetners should be used and low cholestrol oil should be used.

try this too:
Combine 3 tbs of unsweetened cocoa powder with 1 tbs of vegetable shortening = 1 OZ OF CHOCOLATE
2 tbs cornstarch = 1 EGG
Honeysticks = energy gel
Soap substitute: wrap oatmeal in handkerchief tied in rubberband, dunk in water

I understand that cold pressed coconut oil is even better than olive oil. You can use it just about any way that you use olive oil. It's also supposed to help loose weight and helps with different desease such as rhuematoid atheritice. I haven't had a change to use the vrgin cococunut oil yet but do use the louAna coconut oil and I like it for frying and every thing else. It dosen't give a coconut taste to any thing.

I use soyabean oil or canola oil which is colestoral free. I have learned it as first time that olive oil can be used for cooking. Yes wheat flour is best you use. For making baking or other food technique of cooking make it more tastey even some woman born with best of luck as whatever they cook it become tastey - this God gifted hand.

the applesauce tip sounds great. I also use turkey for all recipes that call for beef. I don't eat beef so turkey has always been the go-to for me. I usually get the low fat mayo or cream cheese but my boyfriend complains that they don't taste the same to him, to me they do though.

Another tip is I use diet soda in cake mix in place of the oil/eggs. If you use different flavors it turns out really good.

Soy flour! A tablespoon is a subsitute for an egg.
Also, try powdered milk instead of cream. Just mix it with half the water called for. It works better if you make it up in advance and let it chill for a while.
Powdered milk is also a good addition in other recipes. Just sprinkle a little in and it adds some extra vitamins and calcuim.
You can also sprinkle some wheat germ on your food for some extra easy fiber.
