What else can I make with an Eye round?

I made 2 roast beefs, but I have 3 more eye rounds. I know that I can freeze them, but I am looking for anything to do with them other than a roast beef. They were on sale this week at a local market!

You can slice them really thin and make something like minute steaks out of them....or cut them up for stew meat.You may try cutting them into strips and make fajitas or beef stroganof....I like eye of round....it's really lean and you don't have to use it as a roast.Just cut it to what ever you want to make.....the above are only a few examples.

Oh I never thought of cutting it up into thin strips for fajitas! That is a great idea!

You could tenderize them and then cut it into small pieces for stew meat. Stew meat is so expensive at the store because it is already cut. So I often just buy a steak or something like that and tenderize it and then cut it it up. I love beef stew so we try to have stew meat on hand :)

EYE OF THE ROUND STEAK Wrap a slice of bacon around each eye of the round steak, insert a toothpick to hold bacon secure. Sprinkle with garlic salt, seasoning salt and Worcestershire sauce. Marinate for at least 30 minutes for flavor. Fry steaks in butter until brown with lid off. Turn steaks and cover. Simmer a few more minutes. BBQ EYE OF ROUND 1 tsp. salt 1 tsp. chili powder 1 tsp. celery seed 1/4 c. brown sugar 1/4 c. vinegar 1/4 c. Worcestershire sauce 1 c. tomato catsup 2 c. water Simmer 1/2 hour. Cover eye of round roast and marinate for 6 hours, turning every 2 hours. Heat oven to 350 degrees. Cook until the internal temperature of the roast is 160 to 170 degrees. Slice thin, eat on Kaiser rolls. Hope this helps!
