Garlic and Cumin Grilled Pork Loin Roast Recipe
Ingredients:
1 boneless pork loin roast, 2 to 3 pounds
1/4 cup olive oil
2 tablespoons ground cumin
8 garlic cloves, crushed
2 tablespoons lemon juice
4 tablespoons chopped cilantro
1 teaspoon coarsely ground black pepper
1/2 teaspoon salt
Directions:
Place olive oil, cumin, garlic, lime juice, cilantro, pepper and salt in bowl of food processor; process to a smooth paste (or place in blender and blend well).
Place pork in shallow pan; rub with paste, cover and refrigerate 2 to 4 hours.
Prepare medium-hot banked fire in covered grill.
Grill pork over indirect heat, away from fire, for about an hour, until internal temperature measured with a meat thermometer reads 150 to 155 degrees F.
Remove roast from grill, let rest 10 minutes before slicing to serve.
Serves 4 to 6.
I might also suggest that you look up Indian Cuisine recipes. They tend to use a fair amount of cumin spices in their food and it would give you many options.

Hi Tanika,
you have good tastes, especially as Cumin is a key ingredient in Curry... also a very healthy herb - prevents nasty diseases like cancer & etc getting a foothold..
I'd suggest that Cumin can be applied to any recipe which might otherwise call for Curry, and there's an awful lot that would fall into that category.
Strangely enough, I don't have any Cumin recip[es that I could find in my own recipe books, but there seems to be a lot of good info on Cumin recipes available on the Internet, eg -

It's got me thinking now, about something I might not have otherwise. Thanks!

Cumin is great paired with ground red pepper. I would agree that adding it generously to chili is a great idea. Also, any type of legumes hold the flavor of cumin well. Hope that helps a little!

Enchilada Sauce is pretty good home-made.
8 cups of water
1 t slat
3 T chili powder
1/2 t garlic powder
1/2 t onion powder
1/2t ground cumin
1/2 t black pepper
1/4 cup Masa harina flour
Bring the water to a boil and whisk in the remaining ingredients. Simmer a few minutes to thicken slightly. It will make aprx 6 cups of enchilada sauce and keeps well in the refrigerator.

Please try Jeera(cumin) rice recipe. It tastes so good with kidney bean (Rajma) masala.
