Hard to find recipes

Currently I am trying to compile number of recipes. One of the things I would love to do is get some input into some of the little known recipes that might be out there. You know the ones that either are hard to find or rarely used. One of my favorite is Potato Pancakes. Most of the ones I have found use mashed potatos or instant potato mix. What I am looking for is one using grated raw potatos, mixed with pancake mixture and then fried in a skillet until golden brown. Does anyone happen to have that recipe? It seems easy enough but I think it has something added to it that I've left out. Mine doesn't taste as good as the ones I remember. Oh also these are great to eat with apple sause as a topping in place of syrup.

I think that what your looking for is actually called Potato Cake, its a Polish recipe, which have also been known as blinny, placki kartoflane, latkes or latkas just to mention a few... My ex-husband taught me to make it years ago, but the recipe I have does not call for a pancake mix to be included. Here is a link for you and which has 5 recipes. http://www.cooks.com/rec/search/0,1-0,polish_potato_pancakes,FF.html Potato Cakes/Pancakes 1 pound Potatoes, peeled and grated 1 small Onion, grated 2-1/2 Tbs. Flour 1 Egg 1/2 tsp. Salt 1/8 tsp. White pepper 1/4 cup Olive oil Directions: In a small bowl, combine first 6 ingredients until blended. Heat oil in fry pan. Scoop a heaping tablespoon of latke batter into oil. Continually turn latke over until they are brown on both sides and potatoes are cooked. Remove latkes from pan and place on dish. Repeat with remaining latkes until all the batter is used. Top with sour cream. Makes 14

that is some thing i have never had is potato pancakes. there is a site i go to alot to find alot of recipes and that is www.cooks.com i have always found what i was looking for plus. i would try it they have many different ways to cook one thing. hope this helped
