My mom is a great cook so there are lots of things of hers that I love. She has been writing down many of her recipies since my sister and I were kids. This way we would have a cookbook of all our favorites. She is still working on it, and often gives us lessons on how to make some of our favorites.
It's hard for me to pick one thing only, but I think one of my frontrunners is pasta and lentils. She cooks lentils in tomato with salt pork (this gives the lentils a great smokey flavor), and then you take regular dry spaggetti and break it ito pieces that would fit on a spoon (this was often my job). Once the lentil sause was cooked, you just boil the pasta and then combine. It's one of those dishes that's even better the second day, after it's marinated for a bit. I love mine with a little hot sauce and grated cheese.

My mother used to make that dish too. It is so great and really filling.

My favorite dish that my mother made when I was growing up (and it still is something I beg her tomake me all the time) is linguini and clam sauce. She makes an incredible white clam sauce that I liked so much I would eat it cold the next day for breakfast. It's become a bit of a joke now so that whenever there are leftovers she says "well, this is good, you'll have breakfast all ready for tomorrow."
To be honest, there are very few dishes that my mother makes that I don't love, she is an incredible cook!

You must have an italian Mom, like me! I love clam sauce too. White clam sauce only. Not sure about that red clam sauce thing :-)

My mon prepares natural mushrooms (mushrooms that are plucked from our backyard) curry, which I cherish to have a lot with rice. but to my bad luck, they only come in a particular season every year. So I wait for the season and have them.

My favorite dish was this wonderful brown rice and black bean casserole that my mom used to make. It's still one of my favorite meals and I cook it regularly.

If you don't mind sharing the recipe I would be interested in that. I have been trying to eat healthier and I love both black beans and brown rice.

My favorite as a child was always spaghetti! We had it once a week, and I always looked forward to it. My mom really didn't do anything special... she used Ragu sauce and regular spaghetti, but we all just loved it. I still love spaghetti and so do my kids.

Goodness! It's difficult for me to even think that far back.. But I do remember a few meals that stand out to me that I remember being served to me as a kid..
I know that I used to just love when my mom would make us kraft mac & cheese. I remember she used to include some cut up wieners in the mac & cheese. And I find that seemed to always make it so much better. I used to love eating this dish so much because of the unique twist my mom would give it by including something else with this dish.
You know to this very day.. I will still make my mac & cheese exactly like this. I find if my other half decides to make us mac & cheese as a snack or for lunch.. He will make it for me the exact same way that I had liked it as a kid.. It's truly amazing how some things end up staying with you as you grow up over the years!
I also loved when my mom would make us spaghetti! I used to remember each time she made it I would take my form or spoon & tap it on the table chanting.. "I feel like spaghetti tonight.. Spaghetti, spaghetti.." I used to pronounce it so different back then though.. I remember how I used to make everyone in my family smile when I would do something such as this.. I also remember when I'd leave the kitchen table I'd have a circle around my mouth of redness.. From eating the spaghetti. It seemed like the spaghetti ended up rubbing off around my mouth. haha. Hearing family members tell me about this seems to make me smile to myself each time I hear it.
I also remember how my mom used to own her own restaurant.. So if she was busy at the restaurant & knew we didn't have lunch.. She'd go & cook us up something at the restaurant & get one of her co-workers to bring it to us.. We'd always be playing in the beach below our house when the food was brought.. And I remember how excited I was each time she'd bring us her specialty.. Her famous chicken burgers. She always made them herself for me & my sibling.. And we'd sit there close by the beach eating our chicken burgers.. Just enjoying the gorgeous view of the lake below us.. This memory seems to really stand out to me as I've grown older over the years.
In conclusion.. All of the dishes I can remember are the ones that truly we're some of my very favorites. I am sure if I was to ask certain family members if I had any other favorites that they'd be able to tell me in a heart beat.. I love how though these childhood dishes that I loved so much when I was younger.. I still love to this very day..
I think it's cute how I still love my macaroni & cheese with wieners in it.. And how I won't eat it any other way.. I love how things from your childhood still carry on with you to your adult hood.. I love this because it makes me feel young at heart each time! . .

One dish I will never forget is steamed eggs with spicy, sweet and sour vegetables eaten with a bowl of porridge. My mom cooked this quite often because it was a simple and cheap meal. We can get the ready made vegetables in supermarkets as well as the wet ones. Don't know why, but I loved it when I was growing up. Hmm, maybe I can cook it for myself soon.
