Why do onions make you cry?Cutting up an onion stings your eyes and makes you tear up uncontrollably.So what is it in onions that make them such an ordeal to prepare?

My favourite way to avoid the tears when cutting onions is to keep a few in the fridge in my veg tray, as I use them up I replenish them, the ones that are in the fridge don't make my eyes tear up.

I've also heard that cutting the onion under water keeps you from tearing up. Another method is keeping a lit candle right by the onion to burn off the vapors. Sara Moulton on Food Network said the best method she knows is wearing goggles while cutting the onion.

when you slice through an onion, you break open a number of onion cells. Some of these cells have enzymes inside of them, and when they are sliced open, the enzymes escape. The enzymes then decompose some of the other substances that have escaped from sliced cells. Some of these substances, amino acid sulfoxides, form sulfenic acids, which then quickly rearrange themselves into a volatile gas.

There's some kind of thing in the onion that stinks the eyes, I can't ever cut without a problem.

I am not sure why onions make you cry but there are some tricks to avoiding the sting that comes from cutting onions.
This is old Mexican Folklore, but my aunt swears by it:
Cut off a slice of onion and put it on top of your head, while you cut the onions your eyes will not tear up. I haven't tried it, but it is supposed to work.
This works (I have tried it): Put your onion in the freezer for about 5 minutes before you slice. It freezes the juices and allows you to slice the onion without tearing up.
This also works (I have tried it): slice the onion into a colondar under running water. This rinses the juices down the drain before they can enter the air and stinging your eyes.
I prefer the freezer method as it doesn't waste water and living in Texas we are always under water restrictions.
