We dont do much extra for St Patricks day. We always try to wear something green and have this wonderful bread but that is about it. What do you do to celebrate St Patrick's Day? I love cooking with applesauce. It reduces the fat as opposed to cooking with oil. Applesauce makes a wonderfully moist cake or bread. It adds a flavor all its own. This is recipe makes a wonderful Irish Soda Bread. Great to make for St Patricks Day. Enjly Applesauce Irish Soda Bread 3 cups all-purpose flour 1 TBSP sugar 2 tsp. baking soda 1 tsp. salt 1 cup low fat buttermilk 1/2 cup apple sauce 1/4 cup butter or margarine, melted 2 TBSP skim milk 1/2 cup raisins Preheat oven to 375. Spray and 8" round baking pan with nonstick cooking spray. In large bowl, combine flour, sugar, baking soda and salt. In a small bowl, combine the buttermilk, apple sauce and the melted butter. Add apple sauce mixture to the flour mixture; stir until mixture forms a ball. Turn out dough onto well floured surface; knead raisins into the dough. Pat into a 7-inch round. Place dough in prepared pan. Cut cross in top of dough, 1/4 inch deep, with the tip of a sharp knife. Brush top of dough with milk. Bake for 35 minutes or until toothpick inserted in center comes out clean. cool in pan for 10 minutes. Invert onto wire rack; turn right side up. Cool immediately. Cut into 16 wedges.

This is like my 5th attempt to post, it just keeps coming back saying write a response :( too bad I can not just copy paste my own words. Anyhow, we do make the Irish soda bread - only have never seen the applesauce variation. We also do the corned beef and cabbage (new england boiled dinner with corned beef) unless it falls on a Friday in which we will do a baked salmon and a nice potato chowder.

Never before has St. Patrick's day had meaning to me; but I now have a terrific internet friend from Ireland. I am going to make this bread and send her this recipe and tell her how I came to get it and how great it is! Thank youo ~Donna

My grandma always makes Irish Soda Bread, with the cross in the top. Then we usually have corned beef and cabbage, or just some beef stew if we don't feel like corned beef. I'm not sure if I'd like the applesauce in the soda bread, because I don't really eat it as a sweet. I like to dip it in my stew, and that wouldn't taste too great with applesauce or raisins...it looks like a good recipe though. Maybe I'll try it.

You must be a wonderful cook, how do you find the time to do all that? I don't cook anything special for St. Patrick's Day, or any day other than Christmas, New Years, Easter and sometimes but not always thanksgiving. I just don't feel like doing much cooking anymore.
