Applesauce Granola Cookies (Sugar-Free) great for diabeties!!

Applesauce Granola Cookies (Sugar-Free) 2 large eggs 2 tablespoons vegetable oil 1 cup unsweetened applesauce 2 tablespoons frozen concentrated apple juice, unsweetened 2 cups unbleached white flour 1/2 teaspoon baking powder 1 teaspoon cinnamon 1/2 teaspoon nutmeg 2 cups unsweetened granola To prepare homemade, unsweetened granola, combine equal amounts of any of the following: rolled oats, chopped nuts, flaked coconut, finely chopped dried fruit, seeds. In a mixing bowl beat together eggs, oil, applesauce, and apple juice concentrate. Add flour, baking powder, and spices. Beat well. Mix in granola. Drop batter by teaspoons onto oiled baking sheets. Bake at 350 degrees for 7 to 10 minutes or until firm to the touch and bottoms are browned. Cool on wire racks.

I will definitely make these. The kids need cookies for their lunch box next week. And I'm trying hard to cut down on our sugar intake. This is a great recipe.

Sounds yummy...I love granola especially when it's chock full of dried fruits. I also enjoy using fruit puree/applesauce in recipes. I just used fruit and BEAN puree and yesterday with a healthy cookie recipe.

they sound lovely and yummy. I am thinking of doing more baking and cookies and cakes is something I am going to make more of. Much more tasty than anything you can buy in the shops and more fun as well. I always loved to bake when my children were younger.
