Exciting Vegetable Dishes.

Does anyone have some great ideas for vegetarians/vegans? Stir fries & risottos are pretty common for dinner, but what is something different to make? Preference: No meat, eggs

I have a ton of vegetarian recipes easily on hand, but a lot of them include dairy or eggs. There are, of course, substitutions that could be made, but... What I'm really asking here is do you want strictly vegan recipes, or would you mind some with dairy too?

Just use some olive oil in a wok or pan, and stir fry all the greens you enjoy with some soy or bean curd. Or, bake mixed veggies in oven with cheese melted on top with butter. You can also stuff veggies. Zuccinni stuffed with zuccinni, bread crumbs, cheese, and some oil. Eggplant, the same way. You can add a combination of nuts, mushrooms, and veggies into a large veggi to stuff also. Bake until tender.

you can start with any desired veggies combination of beans,peas,califlower, carrot,beats,pepper(green,red,yellow) etc.. In a sauce pan put some oliveoil fry the diced green onions until they golden brown,now add the veggies saute for atleast 10 min in medium flame. now add salt,pepper,1tsp fresh lemon juice.. you definately like it.. Wont take more than 20 min to cook..
