Great Recipes for Diabetics

I don't know about you, but I have to have my sweets, even if they are fake. Now this is a reason to live! Here's a great Cheesecake recipe for diabetics- it melts in your mouth.
Okay, so it's fake cheesecake- but oh well, at least it's cheesecake -and my husband eats it too- he loves it and he's not a diabetic. Here's the recipe:
Guilt-free cheesecake
1 cup boiling water
1 package sugar free lemon jello (you can use keylime or cherry, or whatever flavor you have on hand, but I think it's best with the lemon)
A little lemon zest (optional)
1 pkg fat free cream cheese (or low fat, your choice)
1/2 carton of fat free cottage cheese
cool whip free (see recipe for how much to use)
3 packets splenda
Prepare a pie plate: spray the pie plate with cooking spray and lightly sprinkle with graham cracker crumbs
In a blender do the following
1. Pour in boiling water
2. Add jello packet
3. Add Splenda
4. Blend well
5. Add cream cheese and cottage cheese- blend well, then turn the blender onto Whip and whip for a couple of minutes- this will make it nice and fluffy
6. Pour into a big bowl and fold in 1/2 container of cool whip with a wisk
7. Pour mixture into prepared pie plate
8. Add a garnish on top if desired of a dollop of cool whip and a sprig of mint- or you can leave off the mint.
9. Put in refrigerator to set- it will take a few hours.
This is what I have when I want to be satisfied but not naughty.

That sounds great. I love cheesecake, but have been swearing off of it, because of my diet and cholesterol. Thank you for sharing this recipe. I can't wait to try it.
