I got a really good one for you. Take two pounds of ground beef, add 3/4c quick oats, 1/2 tsp. salt, 2eggs, 3/4c of your favorite salsa. Mix all of it up and form your loaf. Mix 1/2c ketchup with 1/4tsp cumin and chili powder and spread on top. Cook at 375 degrees for 45min to one hour. Let rest for about five minutes. Yum! I made this up and it is always a hit. The sandwiches the next day are the best. You can tweek the amounts if you like. You won't be disappointed.

I know this is cheating a little bit, but have you ever tried the McCormick meatloaf seasoning? It really makes a tasty meatloaf. You can find it in the same section with the dry gravy packets. The directions for use are right on the back of the package. I usually follow the directions exactly, except I add a little more of my own seasoning, and also sometimes add some chopped veggies. Give it a try...your husband will love it.

This flavorful meatloaf recipe is made with ground round, chopped onion, oats, tomato juice, ketchup or barbecue sauce, Worcestershire sauce, and egg white.
INGREDIENTS:
2 teaspoons butter
1/4 cup chopped onion
1 1/2 pounds ground round or ground sirloin
1 cup quick-cooking rolled oats
1 cup tomato juice
1/2 cup barbecue sauce, divided
1 egg
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic salt
PREPARATION:
Heat oven to 350°.
Heat butter in small skillet over medium-low heat. Add onion and sauté until tender.
Combine cooked onion, ground beef, oats, tomato juice, 1/4 cup barbecue sauce, egg, Worcestershire sauce, salt, pepper, and garlic salt.
Stir until well blended. Press into 9x5x3-inch loaf pan or meatloaf pan.
Bake at 350° for 50 to 60 minutes. Remove from oven and spread remaining barbecue sauce over top. Return to oven and bake 10 minutes longer.
Remove from oven and let stand 5 minutes. Place loaf on serving plate. Slice and serve.
