Chilli recipes

My husband just LOVES chillis, as hot as he can get them. Today we went to a chilli festival and bought a few new plants and things.
Can anyone suggest some things that I can cook for him that use the chillis? Any tips for preserving them for future use? I have a few receipes that use a little bit here and there, but I want to make him something really HOT!
Also, I have about 10 different jars of chilli sauce, all of varying degrees of hot-ness. Any suggestions for how to use these up? I'd prefer to use them, and then re-use the bottles to preserve and make my own types of sauces.
Any tips or receipes or advice would be greatly appreciated!!

Chilli toffee is a bit different and would satisfy his hot cravings, also chocolate dipped chillis. Make lemonade and add a sliced chilli and some root ginger for real kick. Fried egg chilli chutney sandwiches would use up your chilli sauce stash, so would cheese and chilli on chips (thick cut fries for the Americans)

What I do with my ripe chillis if I am not using them immediately is:
1) I string them together using a needle and thread. I run the string through the stem. Hang them with the stem end up to dry out. You can crumble them into foods to season.
2) I have also pickled and canned them. Use a basic brine water, vinegar & salt - you won't need other seasonings, the peppers will do their thing.
