My favorite egg recipe is "Goldenrod Eggs" ... You hard-boil eggs, and make a white sauce. The white sauce - Cook a little flour a while in melted butter, then add milk, and/or half and half. Salt and white pepper to taste I made it with 100% half and half once, but I wouldn't do that all the time. Cook it slowly, stirring constantly until thickened to your liking. When the eggs are cooked separate the yolks from the whites, the latter being cut into relatively large pieces that are put into the white sauce. Crumble the solid yolks with a fork. Toast bread, put on a plate. Pour the white sauce with egg white on top, sprinkle the egg yolk crumbles on top, dash paprika on top of the yolk.

A Dozen Eggs - A dozen eggs for eating and enjoying.
Have you ever tried quiche? I love making quiches. There are so many different things you can add to them to make them a bit different. A quiche is like an egg pie, they are very light, but filling. I always use ready made pie crusts for mine, but you can make your own if you are good at that. Here is one recipe I use. Best Ever Broccoli Quiche 3 eggs -- beaten 2/3 cup chicken broth 1/2 cup heavy cream 1/2 teaspoon salt 1/4 teaspoon tabasco sauce 1/4 cup parmesan cheese 2 cups broccoli -- chopped 1 cup swiss cheese -- grated 1/4 cup scallion -- sliced 1 pie crust (9 inch) -- unbaked In a bowl beat eggs with broth, cream, salt and tabasco. Set aside. Poke holes in the bottom and sides of the pastry shell and bake at 450° for 5 minutes. Remove from oven. Sprinkle pastry shell with 1/2 of parmesan cheese. Scatter 1/2 of broccoli, 1/2 of swiss cheese and 1/2 of scallions into shell. Repeat broccoli, swiss cheese, and scallion layers. Pour egg mixture over these ingredients and sprinkle with remaining parmesan cheese. Bake at 450° for 10 minutes. Reduce oven temperature to 325° and bake 25 minutes longer or until knife inserted in center comes out clean.
