3 Chocolate Cookies, or The Triple Threat

1 cup butter, softened (2 sticks)
1/2 cup vegetable shortening
3/4 cup sugar
1 3/4 cups firmly packed brown sugar
3 large eggs
1 tsp. vanilla extract
3 3/4 cups all purpose flour
2 tsp. baking soda
1 tsp. salt
1 pkg. semisweet chocolate morsels (12 ounce)
1 cup milk chocolate morsels
3 squares bittersweet chocolate, chopped (use the 1 ounce squares)
1 cup almond brickle chips
Preheat the oven to 375 degrees. Lightly grease baking sheets.
With an electric mixer, beat the butter and the shortening at medium speed just until creamy. Gradually add the sugars, beating until fluffy. Add the eggs and vanilla, beating well.
In a small bowl combine the flour, baking soda, and salt. Gradually add the butter mixture beating until well blended. Stir in chocolate morsels and almond brickle chips. Drop cookies by 1/4 cupfuls about 3 inches apart onto the prepared pans. Bake 11 ro 12 minutes or until lightly browned. Let cool for 2 minutes on baking sheets. Remove to wire racks to cool.

3 Minute No Bake Cookies
min 3 min prep
Change to: cookies US Metric
2 cups granulated sugar
8 tablespoons margarine or butter
1/2 cup low-fat milk
1/3 cup Nestle Toll House baking cocoa
3 cups Quaker Oats (quick or old fashioned*, uncooked)
In large saucepan, combine sugar, margarine, milk and cocoa. Bring to boil over medium heat, stirring frequently. Continue boiling 3 minutes, stirring frequently.
Remove from heat. Stir in oats.* Drop by tablespoonfuls onto waxed paper. Let stand until firm. Store tightly covered.
Makes about 3 dozen.
*If using old fashioned oats, cool mixture in saucepan 5 minutes
