Dude you missed dinuguan, that is if you're not an Iglesia!;)
I love CPA, sinigang -from pork to fish, sisig, lechon (roast pork/chicken), anything with gata is also my favorite, chicken inasal, caldereta, mechado and also estopado!;)
These are some of my favorite recipes that I love to cook and serve..

the filipino foods that i miss so much are the following that we can't find here in U.S. : halo-halo ; cassave cake ; papaya pickles ; lechon are so rare ; squid with the black sauce ; native chicken soup ; our native mango or buko pandan ; sisig and palabok ! wala kasi dito sa lugar namin mga Filipino or Asian stores and restaurants. though we can still eat CPA - chicken pork adobo , sinigang na baboy or sugpo , pinakbet , crispy bangus , ginataang mongo , sweet style pinoy spaghetti , bistek and even pancit canton 'coz i know how to cook the following :)

We have different types of food from our country. We have what is called Chicken Adobo and Pork Adobo. Lechon Baboy -- is pork skin with pork meat and its good with sweet and sour sauce. the rest of what I typed to translate it most of them are foods mixed with seafood, chicken and certain meats in vegetables. Sabaw is soup.

Is there a Filipino who doesn't love Filipino food? :) Anyway, you forgot to mention leche flan, puto-bumbong, sapin-sapin, bibingka, putong-puti for the dinuguan, maja blangka, pansit guisado, any dish with gata, halayang ube, relyenong bangus, daing, tuyo, humba, putsero, boneless bangus, crispy pata, tsitsaron, atsara, all the type of suman, pastillas de leche, ensaimada, inipit, etc., etc. The list is endless. Hmmm...I suddenly felt hungry :) I miss the fishball and kikiam.

Hi! let me share with you a recipe which my Mom has concocted and i think its the best seafood cooking ive ever tasted, i missed it though now, because she's passed away 16 yrs ago...but..i can remember how she does it. First, you choose good looking mudcrabs (alimango), meaning fat mud crabs. second, removed the carapace and then collect the fatty content. then mixed this together with a young shredded coconut spiced with spring onions, ginger, salt to taste and MSG if u wish. After mixing/blending them uniformly, put back the mixture to the crabs to replace the ones you have removed before, put back the carapace and tie it, and its just like u are having a whole new crab. then boil them in coconut milk, with some veggies like squash, string beans and okra.Presto! you got a milky concoction - the soup tastes real nice, and enjoy the crab the way you like it. smiles...

i love all the mentioned foods. i'd like to add diningding (similar with pinakbet). i also like alimango (crabs)- just boiled in water with salt and then before eating it with rice, i soak it in vinegar with salt and garlic. My gosh! I'm getting hungry as I write this! :) I have seen on TV how to make Bibingkong Beloy. It's a native sweet from Cavite. I would like to try it sometime. It looks very delicious on tv. Anybody here knows how to cook it? Calling all the Cavitenos out there! I forgot the recipe and the procedure already. All I can remember is how it looks like on TV. :)
