Cheesy pasta.... anyone?

ME! ME! ME! i do love pasta with fully loaded of great cheese on the top of it..
And also lotsa lotsa melting cheese for my lasagna..
mmmmmmmmmmmmmmmmmmmmmmm very tempting!
I cant wait to have it!

For more subtle flavours, try Emmenthal and Jarlsberg - they melt quite like mozzarella so be prepared for a lot of stirring if in a sauce, alternatively melt them over the top.
For a spicy recipe, add some cajun spices and monterey jack cheese. mmmm!
strong white cheddar is very good for a nice strong flavour in a sauce, as is quite a strong red leicester, or perhaps a smoked cheese for a different sauce (if it's going with ham in a carbonara style sauce).
I'd recommend not trying goat's cheese or sheep's cheese as it can be quite acrid, as well as some crumbly cheeses like wensleydale.
If you have a little brie or camembert they can be used for ace sauces, as well as a stilton or blue cheese to be used for a really strong sauce!

for me, if im using white sauce on my pasta, i want to use mozzarella...for zetti's, its best to use meat sauce on that with any ordinary cheese you prefer..

i usually use parmesan cheese with my white sauce pasta specially if i will add some seafoods in it .
sometimes i also use american white singles to melt with the white sauce with ham slices then bacon bits toppings with the pasta and dash of parsley flakes . very great too with hot toasted garlic bread .
