Indian,thai and chinese are my favourite cuisine. here is one of my fav thai recipe THE RED CURRY ingredients 1.6 ounces chicken(cut into bite sized pieces) 2.1/2 cup coconut milk 3.4 ounces thai eggplant(small eggplant substitute with green peas). 4.1tbsp fresh basil leaves. 5.5,6 lime leaves. 6.2 tbsp fish sauce. 7.1tbsp sugar. 8. oil for cooking. 9. 1-3 tbspred curry paste( dry red chillies,garlic,onion,ginger,salt,lemon grass,shrimp paste.) METHOD cut the chicken up,then briefly fry the curry paste until fragrant,reduce the heat,add the coconut milk slowly and continue to stir while cooking until a thin firm oil appears on the surface. add the chicken and other ingredients except the eggplant,bring to a boil and cook until the chicken begins to change color.adjust the flavors according to youself.when it is start to boil again add the eggplant and continue till the chicken is cooked through. serves with rice. hope you like the recipe. thanks
