That's funny...when I was a kid we had it every Thursday. Now I eat make it maybe once every couple of months. My son just loves it. It's one of his favorite meals. I add cashew pieces in mine; it gives it a little zip and crunch. I have lots of casseroles that I make. It is easy on my hubby's schedule to fix a casserole for dinner. ( I never know how late he is going to be.)
Easy Chicken Taco Pie
2 cups of cut-up cooked chicken
1/2 c. chopped onion
2 tablespoons taco seasoning mix
1 cup Bisquick
1 c. milk
2 eggs
1 c. shredded cheese (4 oz)
Heat oven to 400. Grease bottom and side of glass pie plate. Mix chicken, onion and seasoning mix. Sprinkle in pan plate. Stir together baking mix, milk and eggs with fork until blended. Pour into pie plate. Bake 30 to 35 minutes. Sprinkle with cheese and bake 1 or 2 minutes longer until cheese melts. Garnish with lettuce, tomatoes, and sour cream if desired.
Makes 8 servings

I love tuna noodle casserole! I used to make it alot, but haven't in a long time. I will have to make it again son because you brought it to my attention. I got my very simple recipe out of a Campbell's Soup Cookbook. All that was with it was a can of cream of mushroom, 1 cup frozen peas, 1 can tuna (drained) 1 cup cooked noodles, and a little milk to thin the soup. And a little pepper too before it goes in the oven at 350 for 30 minutes. Right when it comes out top it with crushed potato chips. Yummy!

We really like tuna casserole too. Not as often as once a week, but we still really like it. We have it with peas in it.

I don't eat any kind of fish so tuna casserole is out of the question for me. Instead, I use a can of chicken and make it just like you would tuna casserole.
