This is very easy but good.
1 cup chocolate chips (or any semi sweet or milk or dark chocolate--whatever you like. The better the chocolate, the better the mousse will be!)
3 tbsp butter, cut into pieces
2 tsp instant coffee
1 tbsp hot water
2 tsp vanilla
1/2 cup whipping cream
Melt chocolate and butter (in microwave or on stove, being careful not to burn the chocolate)
Dissolve coffee in hot water. Stir coffee and vanilla into chocolate. Let cool.
Whip the cream until stiff peaks form; fold into chocolate. Spoon into serving dishes and refrigerate (or freeze if you like frozen mousse). This makes 2 servings but can easily be doubled
