I'm a big potatoe fan, I love them baked, fried, scalloped, or mashed...Though I do get tired of the same thing, Sometimes we do salad, or fried rice. But my favorite is still French Fries, I tend sneak them into a meal whenever I can.
How about you? What's your favorite?

Potatoes aren't a side dish to me - my "main dish" is usually a combination of protein and carbs or two complimentary dishes (but I'm a vegetarian, so my food doesn't center around a meat main dish). One of my favorite dishes is Jansson's Temptation, a dish from my childhood in Finland. Soooo good, definitely not a side. My fave side dishes... Salads, any kind of veggie, marinated anything (from pickles and beets to olives and sundried tomatoes).

You and I both - I loooooooooooooove potatoes, they are my downfall as far as the weight issue is concerned. I am not crazy about fries but everything else you described especially mashed with a hint of garlic.
I also like spinach and mushrooms as side dishes.

I love side dishes and I want to share recipe of it ..
FUMI SALAD
8 tablespoons almonds - slivered - toasted
8 tablespoons sesame seeds - toasted
1 head of cabbage -shredded
6 green onions - sliced
4 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper
2 tablespoons Accent Seasoning
6 tablespoons rice vinegar
3/4 cup salad oil
2 packages of Top Ramen
(NOODLES ONLY - crumbled)
Toast nuts and seeds in a heavy skillet on top the stove. Heat slowly over low heat, shaking the pan like you would for popcorn. Cook until slightly browned. Takes about 10 minutes. Set aside to cool. Shred cabbage and slice onions; mix together in bowl. Combine sugar, salt, pepper and Accent Seasoning together and drudge into cabbage. Mix vinegar and oil together adding to cabbage and stir. Crumble Ramen noodles adding to cabbage along with the nuts and seeds. Stir. Refrigerate.

I don't like potatoes all that much. I prefer sticky rice or pasta any day. If I go to a fast food restaurant, I'll ask for onion rings instead of fries.
As a side dish, I like caesar salad or greek salad.
