What different herbs do you like to use?

What are some of your favorite herbs and spices to use when you are cooking? What is their distinct flavors? One of my favorites is parsley that has a couple of different kinds.Parsley has a peppery, fresh flavor. The flavor of flat leaf parsley is stronger than that of curly leaf parsley. Parsley is generally used fresh as a flavoring or garnish. Do you have a special recipe that uses the herb or spice you like?

I am a country cook and use very little salt in my cooking. I have found that we dont miss the salt if I use alot of spices. so i tend to use alot of different kinds. I love to raise my own herbs and spices such as parsley, rosemarry, mint and many other kind. I love all herbs.

Do you find it very hard to grow your own herbs and spices? I have thought of growing my own since I can very seldom find fresh ones at the store but I was worried that it might be too hard.

No it is not hard at all. If you can raise house plants or outside flower garden, You can raise herbs.

I have several pots and tubs of herbs on my patio that I use for cooking. I have several varieties of mint, and also thyme, rosemary, chives, coriander, four types of parsley, oregano and a few others too. I use my mint to make a refreshing mint tea in the summer and I make mint sauce too to have with lamb. When I do a roast of lamb I make small slits in the skin and push rosemary needles under the skin, then rub the whole joint with fresh mint before cooking.

Wow, you really know your herbs. I have never made lamb before. I have wanted to try it but haven't yet. I just may try it your way. It sounds good.

Well parsley is right up there. We use garlic alot also. They pair together really nicely for us. We use it with beef or pork roasts, when we bake the chicken and add it to the crock pot at the end to preserve their goodness to things we cook that way. We use other herbs but these two are our more commonly used ones.

Some of my favorite herbs and spices when come to the kitchen matter are ginger root, shallots, garlic, green onion, turmeric root, cardamom, star anise, clove, cinnamon etc. I just love the flavor and the smell they produced which give effect to my food. I also always use the kaffir leaf, kesum leaf, curry leaf, turmeric leaf etc. These all leaves will makes our dish smell nice and gives the flavor on them. For most of my food, I can't leave the ginger root, shallot and the garlic.

I love to use basil, it has such a fantastic taste to it and can really lively up any pasta dish and make it super yummy. It tastes a bit like anise, with a strong sweet smell. Sometimes I find it smells slightly nutty and it's used to make pesto like the pesto alla genovese.

I love almost all kinds of herbs.My best favourites are parsley(fresh corriander here),oregano,rosemary,mint,and cilantro.The young shoots of spring onions and garlic too give tempting aroma to food.Cinnamon and a tiny piece of ginger gives heavenly flavour to soups if boiled alongwith the other ingredients.But the one which I use extensively is Bay leaf.

I like the spicy food. I use a lot of spices and combinations between them what are not usual for this food and sometimes seem strange. Black pepper, sometimes curry, basil,parsley... My mother collects herbs at summer and most of them are home-made.

I like chilli and it is the one we use most regularly oregano and rosemary are also favourites.

I love basil. It goes well with pasta, salad and chicken dishes. I like both fresh and dried ones.

Oregano. There are lots of variations but I like standard "Italian" oregano. It has a wonderful lemony flavor. It actually goes very well with Parsley in Tabooli.

I don't cook that much. I usually like to use peanut oil to flavor the foods that I cook. My girlfriend uses a lot of garlic in the food that she cooks for the family. Usually all I have to add to food is some salt and pepper.
