Nate Teague I love the taste of it all to be honest. But the homemade stuff is really fresh, has more flavour, and doesn't have any of the extra additives. If you make some fresh brownies and mix into into homemade ice cream you'll be in heaven.

Nate Teague I used 2 cups cream, 1/2 cup sugar, 6 egg yolks, 1/4 cup cocoa and a block of dark chocolate. I tempered the yolks and then made an anglaise. Melted in the chocolate and whisked in the cocoa. Chill overnight then churn the next day :)

Nate Teague Exactly right :) More yolks = more creamy. But if you add to many the ice cream starts to get eggy which isn't ideal.

Nate Teague An ice cream machine helps improve the texture - it makes it less icy. I used 2 cups cream, 1/2 cup sugar, 6 egg yolks, 1/4 cup cocoa and a block of dark chocolate.
