I hate leftovers!

Like, seriously. It's just me and an 8-year old kid. We don't eat that much, and I enjoy a bit of variety in my meals.
Between the two of us, I can open a can of pork and beans and still have leftovers, and that's all we ate!
So I started getting these cheap tv dinners. A bit of variety, no leftovers, but they bug my conscience cause of all the paper and plastic I'm tossing.
But I really hate dealing with leftovers, cause neither of us likes them very much and I feel like I'm wasting that way as well!
Any ideas on simple stuff to cook that I could portion out just enough for me and the brat? We're getting kinda tired of the selection (grin)

You could try some planned leftovers. Not quite the same as some food left in the fridge until you toss it out. I make meals then I freeze them into the portions we actualy eat. So if you are making chicken for dinner make the whole meal and freeze it in reusable containers. Normaly they will stay fresh for at least a month. It helps a ton to cut down on waste and saves time and money.

I do that with things like spagetti and chili and such. Thought about making my own tv dinners using ziplok bags and after we eat just portioning up the rest and freezing it.. MIght cut down on waste cause I could wash and reuse the bags, and if I got the heavier plastic "paper" plates, I could reuse them as well...
That merits some thought. Thanks!

maybe u can cook easy food like the two-minute noodles which are kids favorite.some two-minute pasta,maybe simple salads,ready to eat foods.there are plenty of options.the best is to cook at home so u know what quantity u want and cook accordingly.

I live by myself. Have you ever thought of freezing portions of your leftovers and thawing them for another day? I make a regular size meal and then break it down into smaller meals and freeze part of them. When I want something different and don't want to cook I just take one out. I used to do that for my dad too. That way he had a variety of things to choose from.
