Make mine Ranch dressing and serve me up a quick plate. Everything you talk about cooking sounds so yummy.I love the wide variety of veggies in that salad. I have been having a corn relish, corn dip, or corn salad, depending on how you want to call it. It has whole kernel corn, green onions, red and green bell peppers, and rotel, with sour cream and mayonaise as dressing. Great with corn chips for dipping.

i love salads! especially "chef" salads. with cucumber, raw brocolli, boiled egg, croutons, strips of turkey and ham! all with ranch or bleu cheese dressing!
i dont think i would like a salad with bell peppers in it though..dont their flavor overwhelm everything else?

I think the trick with bell peppers is to blend in a moderate amount. Just like onions, you want to go with a sweet pepper or onion and just cut up a little bit. My favorite i the sweet red bell pepper. Try it sometime and let me know what you think :)

oh man your frito salad sounds delicious!!! like a frito pie without the chili - or a taco salad without the meat. mmmm I can not wait to try this out next time I go shopping I will have to remember to get fritos... I think that I would like a dollop of sour cream on it as well.
I like too many varieties of salads to come up with a favorite - but if it is going to be a greens based salad I like a variety of greens but not too much on the ice burg... and I really enjoy an antipasta and also a good greek salad!

Black Bean and Corn Salad. Add one can of drained and rinsed black beans to one can of drained corn. Chop apple, red bell pepper, and bermuda onion into small pieces. Add chopped garlic (as much as you like) then mix. Pour about 2 tablespoons of olive oil mixed with the juice of one lemon over the mix. Then add chopped cilantro to your taste. This is better after it sits for a couple of hours.
Serve it with multi-grain tortilla chips and you have a nice healthy snack.
