Pot Roast for dinner! What are you having?

My daughter and I cleaned out my apartment freezer yesterday and found a bottom round roast I had forgotten about. I brought it to Mom's and it is now in the crockpot with whole new potatoes and the solitary carrot I found in the fridge (I'll add canned ones later). I topped it off with Onion Soup mix. When it's done, I'll take everything out and make gravy from the broth. I'm looking forward to the house beginning to smell like roast beef - and then to eating it!

Wow that sounds yummy. I will be going into work soon to cook supper for my residents, they will only be getting chicken patties on a bun with lettuce and tomato with some chips. They have their big meal at noon, I sure hope there is some corned beef left for me.

Do you run a boarding house or a group home? Even chicken patties sounds good - I love the spicy chicken at Wendy's and Checker's. I'm not a big fan of corned beef, but will eat it if served. Tomorrow I'm going to do breaded fried chicken - I had some frozen (another freezer cleanout casualty), so I'll be doing that for tomorrow. I'm not a big menu planner, but when you don't have enough freezer space, you need to plan to use what you have.

Roast! yummyyyyyyyy..I haven't had roast in ages being I can't afford to buy any. When I make it, I put it in the crock pot with onions, green peppers, potatoes overnight or first thing in the morning. I love waking up to the smells of roast cooking. As for what we are eating tonight, I have no clue being I've slept all day. I'm hungry for eggs right now, thou, but only have 4 eggs so not enough for the 3 of us.

I'll take any roast being they come out falling apart from the crock pot. Can't slice roast when it self-shreds taking it outta the pot. lol

This one didn't shred - I had to use the electric knife, but I have cooked them until they fall apart before. And, you know what - it's not a bad way to eat it! Shred it in the broth and eat it like pulled pork in a sandwich. Add BBQ sauce if you want, but flavored in the au jus broth is equally good on a good Italian roll! Mmmmmm - darn it! Hungry again!!! And, I'm not even hungry!!!

I only buy them when they're under $2/lb. At most, 3 lbs worth. I like them better than chuck because they're less fatty and are easier to cut and serve. But, every once in a while, we can find them for $1.79/lb - cheaper than hamburger. Also a good time to see if you can get the butcher at the store to grind some from the roast for you - saves money that way, too. But, it's a once in a while thing - we keep 2 or 3 on hand and have one maybe every couple of months. Nice change from the usual.
Maybe you can make a frittata from the eggs - potatoes and veggies cooked in the pan and the eggs mixed with milk poured over them and cooked like a big quiche or omelet. Put a little meat in there before the eggs go in. Might work and isn't too hard. Exact methods I don't know, but there are plenty of recipes online to show you the basics. Good luck, if you haven't already figured something out.

Hey there, jerzgirl, I missed this myLot discussion yesterday but I can tell you what we are having today.
I am fixing baked pecan-crusted tilapia for my husband and salmon for me (he doesn't like salmon). He is wild about this nut-coated fish that is oh, so crunchy and flaky at the same time.
For side dishes, we'll have baked potatoes with sour cream and green onions, plus Creamy Maque Choux with Avocados. Maque Choux is a corn dish that has red onion, jalapeno pepper, red bell pepper, and some seasonings with fresh corn cut off the cob and sauteed a few minutes. Then, it's served over a half of an avocado. We love it! It's one of Rachel Ray's recipes.
There you go! I'm hungry already!

Sounds good! I don't eat salmon, either, but the tilapia sounds really good. Maque Choux is Cajun, isn't it? I'm not too fond of anything with jalapenos in it, including Pico de Gallo or even slices of them on Nachos. Although, I will eat them stuffed with cheese, battered and fried (poppers). Still, it sounds pretty good. I have some tilapia in the downstairs fridge I need to cook, so maybe I'll do something like that for me and Mom. Fast and easy and a good summer type meal.

Ok, my turn now.. I am not cooking tonight, even though in my discussion that you were so good to comment on, I did state that everyone's pantry and freezer were completely stocked.. The rules of supper were that you were going to have everything that you needed to make this fantasy meal.. But everyone is coming up with such good meals, that I couldn't decide what to cook tonight, so I am going to Golden Corral and have the buffet.. That way, I can have my choice.. By the way , I have added you to my friends list.. Hope to talk again soon..

Geez - I guess food and fantasy don't go together in my head! I really did laugh out loud when I read this! But, what I made was what was on hand, even if it did come from two different households (prior to my reading yours, which means it was in a single household when I did read it - so, I'm within the rules! HA!) It didn't turn out quite like I'd hoped (the meat wasn't as tender as they usually are in the crock), but otherwise was excellent. We also reheated leftover sweet potato casserole (made up for the non-existent carrots). Going to check my new "friends" now. Thanks for the response!!!

Yes, I have had the breakfast and it is so good.. I am a picky eater but when I go to the buffet, I can pick and choose.. I do love the hash browns and the waffles with pecans..
By the way, I have canned carrots in my pantry, have you ever used them and are they as good as the fresh carrots when cooked into a stew or soup?? I haven't tried them yet.. Since you were so kind as to respond on my discussions, I will return the favor everytime you start a new one..

I don't know what I am having for dinner tonight, I might have a chicken kiev or something not sure. For lunch I had some soup though. I like soup as it is ready in 5 minutes, so you feel hungry and eat it almost instantly.

Mmmmmm - chicken Kiev. There was one of those frozen in my apartment freezer that my daughter claimed to take to work. They're pretty darned good - that butter keeps the chicken moist.
My mother loves soup - she gets meals on wheels and if there's soup with her lunch, she'll only eat the soup and the dessert. LOL I keep telling her she needs more, but only once in a while will she eat more for lunch if there's soup.

I've only ever cooked a pot roast in a slow cooker. Mom always cooked her on top of the stove. Never in the oven. I've never tried the soup mix in a meatloaf, but I've seen that suggested and just might do that tomorrow when I use up the ground beef we have and hadn't used yet. I'll need to use the slow cooker for the meatloaf because our oven doesn't work.

@jerzgirl You can definitely do meatloaf in the crockpot. I have done pot roasts in the oven in a roaster pan and it usually comes out pretty good. I find I like the crockpot way a little better because it tends to come out a little bit more tender.

i and my hubby will be having chicken tonight... sweet soy sauce chicken with potatoes, fry chicken and lettuce to go with it... and we are going to eat it with rice... just simple menu... but we know that we are going to enjoy it... take care and have a nice day...

We are doing hamburgers on the grill. Cukes fresh from the garden. Watermelon and whatever salad a friend is bringing for dinner.
My oldest has a friend spending the night and her mom, big brother, and little sister are coming for dinner, then we are all going to the pool. Crossing our fingers that the thunderstorms don't happen like they are saying.

It was a nice dinner. We ddin't make it to the pool because the adults just sat around and talked. We did get a little rain, but nothing major.

We're supposed to get thunderstorms this afternoon, too. Heard thunder a while ago, which surprised me since the sun is still shining, but I can see clouse across the way, so it probably came from one of them. I like rain - maybe not quite as much rain as some have been getting, but I do like it.

Pot roast sounds yummy I haven't had a good pot roast in the crockpot in a while. I love just the gravy over a slice of bread with mayo so good. Not sure what we are having for dinner. Hubby is cooking but since he works nights this week he will cook dinner for lunch so he should be starting to cook pretty soon.

We don't do the mayo, but we've always had gravy on bread - especially if there are no potatoes. My dad used to tear the bread up - sometimes I do, too. But, the night we had this, the last thing I ate was two slices of bread with gravy, like a hot roast beef sandwich with no beef. Good stuff!!!

Cheating is not always a bad thing. I've done the Chinese meal myself, or stopped for pizza or picked up Wendy's or Quizno's. Just depends on how late I would be after work or how my mother felt when I was working if she didn't feel up to starting supper.
I've tried Mongolian beef, but I prefer Gen. Tso's or chicken and broccoli. Mom likes sweet and sour shrimp or pork. Sometimes I'll get sauteed broccoli and white rice if I'm not feeling up to meat. It's all good!!

Sounds wonderful . One of my favorite meals is a nice roast beef dinner with all the sides .
Today was a simple dinner . We had some chicken on the grill with broccoli . Later , we had some vanilla and banana ice cream .

We had something like that last week - I made breaded boneless pork chops with lemon pepper marinade as the base then dipped in bread crumbs. I can't remember what else I had with it, but the pork was so moist and tender. I think it was asparagus and potatoes, but I'm not sure. Sounds good enough to do again!! Yum.

I hope it turns out. I really only had the one carrot (I like the flavor it adds to the gravy), so I'll let Mom have that. But, it also looks like my daughter will be joining us, so if you can get here by 5 - sure! We'll find plenty to fill up the table!
