Jalapeno/cheddar stuffed meatballs

Has anyone ever made something like this? I looked at a few recipe sites but couldn't find a recipe. My thought is to melt some cheddar, stir in jalapenos, then pour it into a small pan to reharden. Once it's rehardened, I was thinking of cutting it into cubes, and then forming a meatball around it.
Not being the worlds best cook, I sometimes come up with ideas that look good in my mind, but come out horribly. Does this one sound like it would work? Has anyone done something like this?

I don't know about melting the cheddar and letting it reharden. I would try mixing shredded cheddar and the jalapenos. At room tempature you should be able to hold this together and form your meatball around it. If you added taco seasoning to the meat it would taste like a shell-less taco. Let me know if you try it.

Yes, I was kind of worried that the cheddar would separate. Then I though of half cheddar, half Velveeta because the Velveeta melts easily and rehardens well. I love your idea of the taco seasoning! i wouldn't have thought of that. Thanks!

When I was mixing the beef for the meatballs, I went to grab some taco seasoning, only to find that I didn't have any. Instead I added cumin and smoked paprika. They came out terrific! Next time I think I would serve them on top of polenta.

Mmmm, that sounds good. I never thought of doing that but you just gave me an idea. LoL.. Thank you. I will try doing mine by adding in shredded cheddar and some minced jalepenos into the meatball mixture, then form the balls and cook as normal. I don't think melting the cheese and letting it reharden would be too good, it may make the consistencly uneven or lumpy. Let me know what you try and how it turns out!! Happy cooking.

Oooh, I just had a thought.. I will also try to add cheddar and jalenpeno to my mashed potatoes and potatoe pancakes as well. Yum!!

I wouldnt melt the cheese first, it goes a bit yucky after repeated melting.I would chop or grate the cheese, season it, add the chopped chilli (garlic too would be good). To make, I would take a ball of minced beef, make a dent in it, put a spoonful of the cheese mix into that then pinch the meat around the filling. With damp hands I would roll it all into a smooth ball, then I would roll it in rice four for a crispy coating (breadcrumbs might work too, or pinhead oatmeal) and either bake or fry the result. You should get something a bit like Scotch eggs, but with a cheesy middle.

I used half velveeta and half of an artisan mexican blend. The velveeta of course melted first, and I only stirred it enough to blend in the mexican blend and jalapenos. I came out great, but I like your idea too, about filling the dent made in the meat. Next time I think I'm going to add somechopped pappers to the meat mixture for a little more heat. I also love the idea of the rice flour...would they be crispy baked that way?

That sure does sound good! I think what I would do is try using shredded cheddar to form a ball around the jalapeno, then surround with the meatball mixture and cook the meatballs in the oven. I love spicy food, so I think I'll try this some time. Thanks for the idea. Let us know how yours turns out.

They came out terrific! I also diced the jalapenos this time. I like the idea above about stuffing a fresh jalapeno and then forming the meat around it. Seems like it would have one or two fewer steps, and a little more heat to it. I browned the meatballs then finished them in the oven at a lower heat. I was afraid the cheese would cook out...but they came out great!

i'm done something called an armadillo egg, i took jalapenos, deseeded them, filled them with cheddar or cream cheese. wrapped them in spicy sausage and then broiled them. they look like the eggs from the movie cocoon, but they taste delicious. you can get the spicy jimmy dean sausage and make them extra hot, or the regular and be just medium hot. the cheese helps to tone down the spiciness of the jalapenos.

if you leave a bit of the membrane (white white part inside) then it maintains its spiciness, but tones it down, its good to have three different levels of spiciness. i have friend who can handle each level and we like to mix it up. have you checked out allrecipes? you can enter which ingredients you want to use and find recipes that correspond to them.

These ideas are so good! Thank you, this is going right onto my 'to make' short list! You're right, the cheese does cut down on the spiciness quite a bit. Since the heat is mostly in the seeds, I wonder how it would be to leave some (not all) of the seeds in? Or, mix them in with the cheese?
Boy, when the Food Network has a jalapeno meatball cook-off, we're ready!

That sounds good to me, thats probably how I would do it too...lol. I'm not the world's best cook either, so whenever I want to try something new, like you it looks good in my mind, but it may come out horribly...haha. It may work, or you can probably just take your cheddar, and cut up your jalapeno's and mix them in with your meat, and make your meatballs out of it, that might work too.

It would be easier to mix the jalapeno's in with the meat and just have the cheddar cube in the middle. Or, I could by a block of cheddar that already has them in it. They came out really good, but it's a recipe in progress and I'm looking forward to trying them different ways.

I've never made these but Hubby would probably like them. I'd think you could take sliced jalapeno's and cubes of cheese and mix them in with the meat for the meatballs. Then just cook as normal. Or you could put the cheese cube in the center of the meatball and chop the peppers up to mix in with the meat. Just ideas...

I tried mixing cheese in with ground beef to make hamburgers once. After the cheese melted out they fell apart. However, you've given me another idea. Why not cook the meat with the peppers, then after draining, melt the cheese into it? Then it can be served in hoagie/sub/grinder rolls. Kind of like a philly cheese steak with a twist?

to eat all this hot stuff your stomache must be iron girl well this is several months old and im wondering how it worked. sounds good except the jalapenos i couldnt find a more recent discussion of yours. so here iam. btw, i do that to. think of things that sound good then they mess up on me. yes, since agra left iam having to relearn cooking

These meatballs came out terrific. I haven't made any during the summer, too hot. But now that it's getting cooler I will be. Next time I think I'll by a block of cheddar-jack-jalapeno cheese with jalapenos in it. Cutting it into cubes will work just as good, and will probably be less spicy. All summer I've been making hamburgers using a 1/3, 2/3 mix of lean hamburg and turkey. The family likes them better than all hamburger, so I'll try the meatballs using the same mix. Will let ya know!

It sounds good in theory. I'd like to taste it to find out! I think you could take whole jalapenos , cut them in half, discard the seeds, Put a chunk of cheddar in between both pieces and then put the meat (mixed with egg, bread crumbs, and minced onion) around it. You would have to experiment with how long to cook them in the oven. Less time than regular meatballs since there's no meat in the middle. Maybe the jalepenos would be crunchy in which case you may want to bake them (without the cheese in them yet)first. Then go thru the steps. Let me know if you try it.

They were excellent! The family started asking when I would make them again even before the dishes were washed. I made enough of the cheese/jalapeno filling to make another batch, so I'll probably make them again for the Superbowl game. Then I'm going to try some of the other excellent ideas that others had here. Wouldn't it be great for all of us to make our version then get together for a tasting? Would give all new meaning to having a ball...lol.

Now there's an idea I hadn't thought of! You guys are all so creative! I used the melted cheese and chopped jalapenos, but then I had to mold it and cut it into the correct sized pieces. It came out really good. Your idea skips that whole melting process and I like the idea of using fresh jalapenos. I think next time I'll try it your way. Good Superbowl dish!

I am also like you only. If my wife is not with me or some ideal position if I feel hungry I will try out something new but at the end at least it would be edible to eat. I have done many tests like this if I have time in the future I'll update all the methods i have carried to make some special dishes just I want to know are you are a vegetarian or non-vegetarian. Then I'll be able to post something to you when I see a good one(articles or methods to cook).

I haven't done jalapeno/cheddar stuffed meatballs but I would like to try one someday! I like eating jalapenos and cheddar cheese. I used to eat burger with jalapeno a lot back in my college days and i miss it.

I love Jalapenos and cheddar cheese the way I would make it is. I would melt the cheddar in the microwave then cut the Jalapeno up and mix it in. I would wait for the cheese to cool down then mix into my meat and seasonings then I would form into balls. But your ways sounds good to. Maybe I will make some tonight yum!

I was afraid that by mixing the cheese into the meat, that it would run out while the meatballs are cooking. I tried that once with hamburgers that we cooked on the grill. It ended up being one of those great ideas that didn't work, as the cheese melted and the burgers fell apart and through the grates. I might try it again but cook them on a flat surface. Have you made meatballs with cheese mixed in? Did it work?

I cannot stand Jalapeno's they are sooo hot, I am not a fan of spicy food at all, so maybe without the peppers it might be alright.

No, I don't, since I'm at best an average cook. But let me correct you: it's not jalapenos, but jalapeƱos. How do I know? I live in Jalapa, would you believe it, and that's where they are supposed to come from, aren't they? I came across your post when I looked at your profile, and it's a funny coincidence, isn't it?
