Easy mashes potato cakes

Since I have been under the weather lately, I decided to make something easy for supper. I made mashed potato cakes by mixing a buttermilk pancake mix with potato flakes and water then cooked them till golden brown on the griddle. We had sausage to go with it for Saint Patricks day. It was a quick and easy supper.

it seem to be interesting but i rreally dont know mashed potatoe cakes and i have heard it for the first time but i think its quite interesting to know about it. potatoes can be used in wide range of foods and i think it is helpfull specially for the ladies who cook at home and daily think what to cook and what not. and also potatoe recipes are usally quiker ones.

I would never have thought to use a pancake mix as a base for making potato pancakes. I will have to try that for sure! Usually when I make potato pancakes, I do it from a family recipe from Germany that uses raw grated potatoes. Your way would be great for those times when I made too many mashed potatoes and I don't feel like making the other kind. Thanks for sharing your idea, sounds quick and yummy!

I never eat any potato mash cake. But i know another potato mash which is spicy and great test. Just boil the potato and cut onion and red chili and fry them with oil. After fry just mash everything together and use salt. Then take it with rice or bread. Great test and easy to make.

mm that does sound good and filling too. I am going to write this down because with the weather improving quick will be the key and sausages and potatoes who can not like that combo.

I've made potato pancakes out of leftover mashed potatoes before. They taste good if you put something in them.
