Quinoa is an ancient grain that is very high in protein. It contains the 8 essential amino acids, therefore making it a complete protein. It is also high in calcium and iron and a good source of Vitamin E and B Vitamins.
I had it a few times as a side dish mixed with veggies and a little olive oil and spices. Recently I cooked some up and used it in cookies also with other grains and raisons. They were good and what a great way to eat this healthy grain.

Wow, quinoa is very popular here in Israel. We used to mixed it with cabbage which we cut into small pieces and petrozilla together with onions and presto we have a healthy vegetables salad for our meal.
Happy healthy eating.

Sorry for using the Hebrew name of parsley. In Hebrew we called it perozilla. We use to cut all vegetables into small pieces, like cabbage, red bell pepper, green bell pepper, carrots, parsley, onions and I say "presto" means in a short period of time we have a ready vegetables salad mixed with quinoa.
