I and my husband went to a nearby restaurant to eat pancit for our snacks. It was served hot so we really enjoyed eating. Pancit is a noodle dish which was introduced to us by the Chinese. It has so many variations but my most favorite is “Pancit Miki/Bihon” which is a mixture of rice vermicelli, a thin form of rice noodles and round egg noodles sautéed in garlic and onion, garnished with sliced meat, chopped vegetables, soy sauce, and native lemon juice (calamanci). Pancit is actually commonly served during birthday celebrations because according to Chinese belief, it is a symbol of long life and good health. What did you have for your snacks today?

@salonga that sounds delicious. I haven't had lunch yet and will probably have something boring like scrambled eggs on toast, but tonight I am having hamburger and chips, and I can't wait . You can see I am an emotional eater

@salonga I don't buy snacks so I usually don't eat them. I do have fruit around most of the time, and if I want something to eat I might make an early meal.

I also like pancit miki /bihon over pancit. Though, when I eat it it has to have bread or any biscuit.

@salonga it's really delish especially when the weather is chilly. You have to eat them with kimchi. You can actually buy the ingredients at SM international section.
