Sunday celebrates National Cheesecake day, as if we needed a holiday to celebrate the greatness of cheesecake. I enjoy cheesecake. It's my favorite kind of cake. It's in the top 3 of my favorite desserts along with key lime pie and an ice cream sundae with sprinkles. If it was not taboo, I would have it as my birthday cake of choice instead of the more traditional selections. That beautiful mixture of soft cheese, cream cheese, eggs, and sugar on a graham cracker crust is a taste of heaven! Cheesecake is a major dessert fixture at our Thanksgiving table. The dessert comes in many flavors as well including strawberry, pumpkin, and blueberry to name a few. If you might be wondering who started this cheesecake craze we possibly can look to the Greeks as the ones responsible. It has been found that the earliest attested mention of a cheesecake is by Greek physician Aegimus, who wrote a book on the art of making cheesecakes. From those ancient beginnings we fast forward to 1912 when James Kraft developed a form of pasteurized cream cheese, a major ingredient found in most cheesecakes today. By 1928 Kraft trademarked and marketed his Philadelphia Cream Cheese and made a lot of people very happy, including me.
