Atchara- a famous side dish among Filipinos.

Filipinos are fund of experimenting their side dishes. Atchara is one of them. This sidedish are composed of shredded unripe papaya, a little slice of carrots, spices, ginger, garlic. The ingredients is soak in a vinegar jar that will will serve as a preservative. They say it could last a month or maybe a year if stored properly.
They say that the taste of atchara is similar to a pickle in a jar. If you could not bear the taste of the barbecue, you could simply supplement it with it. Craving for it? Better try doing it. It's not only tasty but nutritious.

Yes, atchara is similar to a pickle. Usually, I pair it with fried fish like Milkfish, Tilapia, and Tulingan. My relatives from Batangas know how to make a good atchara. Every time we visit them, they will give us jars of atchara to share with our neighbors here. It tastes really good-- a perfect balance of sour and sweet.
