Home made Broccoli and Cheese Soup

Do you ever make this, home made broccoli and cheese soup? I did for the first time since I had an extra head of broccoli that I could not decide what to do with.
The recipe I found just called for white or yellow onion, match-stock cut carrots, chopped broccoli florets, 1/3 cup of flour (I still have no idea what purpose this served), 2 cups vegetable stock, 3 cups evaporated milk (I bet regular milk would do as well) and 2 cups shredded low fat cheese. Garlic seasoning. Also mustard powder, which I did not have and had to omit as a result.
It turned out good! I was bummed at the end that it didn’t make more, since I usually make heaping amounts so I can meal prep them for a week(ish). In general I don’t enjoy a lot of creamier soups however so I think it worked out.
Have you ever made this? What did yours use?

I have made this, and it is a delicious soup. I can't remember what all goes in it..but I got the recipe for my mother and it uses broccoli and Velveeta Cheese, and I think evaporated milk as well.

I have tried to not eat so much cheese though its sneaking into my menus more and more. I made very tasty scalloped potatoes by sprinkling in nutritional yeast into the cooked down potatoes. Now that its winter I make quite a few soups, including the creamier ones like potato chowder. I just use almond milk and if it needs thickening, I add whole wheat flour. Works well for me.

That sounds good. And at least it has the benefit of being whole wheat. Whenever I bake anything I use while wheat as well to try to make it a bit healthier. But I agree, the real cheesy soups are not that good for you but sure taste good!

@maezee Any dessert that is baking powder based has fresh ground whole wheat in it over here. No white flour- that I use when I make yeast bread- about half white and half other 'stuff.' I agree that cheesy soup tastes great. One of my addictions is melted cheese on toasty bread.

I would not know the purpose of the flour either, the cheese should thicken it.

We have never done it homemade, but it is delicious. Especially in a bread bowl.

I haven't tried making a soup like that but I'd like to one of these days. I like to puree the broccoli and add them to creamy pasta sauce.

I think the flour is to thicken the soup? I have never tried this but I totally want to :) I just recently discovered broccoli cheddar soup from Costco and liked it. I don't like Costco's version since its not fresh but I want to make it. I will have to.

I have never used evaporated milk in a soup …..bet it makes it taste really creamy
