Food of Southeast Asian countries always have these kind of spices during processing. The taste of food will lose its richness without one of these. Previously, Western countries did not use these spices much in cooking but I recently see them more often in the ingredients of dishes in the Western cooking show on TV
Maybe following to the current general trend, the East and West interference in cuisine is increasing day by day

Yes. Most asian dishes are cooked by sauteing those spices including tomatoes. Its adds to the richness of flavor.
