Do you love eggplant omelette?

Hello 
Good Morning/Afternoon/Evening to all my dear mylotters
I woke up with a cloudy and cold weather 
It is nice Today, I love to prepare a food that I used to cook when I was living in my home country Philippines. I miss this and I can make it here in the country I live in now.
Eggplant omelette is easy to make just need some little effort in removing the skin by grilling it first. Then fry the ground beef with salt, garlic and onions. Then, mix it with the scrambled egg then Fry it again. 
What about you my dear mylotters? Do you love eggplant omellete? What do you plan of having today?

I like eggplant but as a vegetarian I don't cook using eggs lol.

I don't like the taste of aubergine (eggplant is called aubergine here) but I love omelettes and make quite a few every day as I work in a kitchen

I am a vegetarian. I love eggplants and make similar dish without beef or meat in eat. Yes at times we add scrambled eggs to it.

Yes i do love omelette eggplant,i used to request that to my mother for packed lunch when i was kn highschool,but today i cant eat eggplant for now

It's still dark here. I'm all dressed and waiting for the sun to rise, so I can take my morning walk.
I never had an eggplant omelette, but know that would taste delicious. I love eggplant and omelettes!

Definitely one of my fave foods. There was a time that I had this for breakfast every day because there was a food seller near my house and I'd buy from her on the the way home after dropping my kids to school. I miss those days.
