I love meatloaf. I used to eat out with my Dad often years ago, we would always get seafood. Mackerel was a favorite.

I love meatloaf and so does Hubby! Unfortunately my kids don't care for it

It was chillier and damp here today. I've not made meatloaf in years. We had chicken made in a stove top wok. Much easier to fit the chicken and cook it properly. I added onion and seasonings and when it was cooked I added some mixed veggies that were frozen. My husband had it over leftover rice and I used caulk rice instead.

@CarolDM I do feel better, but I'm still very weak, and I still can't get rid of this nagging cough. I'm going to schedule an appointment with my doctor next week to have my lungs checked out. It's possible I may have a secondary infection, a respiratory infection of some sort.

Looks good. It's been awhile since I made it. And when I did I make it, I baked it in a crockpot. I had a recipe. Have you ever baked it in a crockpot?

@CarolDM Surprisingly, after shaping the meat and putting it into the crock pot, it held together as it baked and was easy to cut when fully cooked. The only thing was that it was shaped in the shape of the pot so it would fit properly. It was shaped in a circle, not a loaf shape. But it was still very tasty.

I have not baked this in a crockpot. Not sure how it would hold together like it does in a loaf pan.
