Corn meal with tripe.

I'm having ugali with matumbo for lunch. I just found out matumbo is called tripe in English. A type of meat that is edible stomach lining/ intestines of farm animals especially cows. My parents love this type of meat. And the ugali is a type of corn meal. Tripe is good source of protein, zinc and phosphorus. What a healthy meal I had. What are you eating today?

Some locals in my country eat this intestines thing, too. I am not a fan of it though.

I like tripe, we prepare tripe like a stew here and serve with bread or polenta, that is a type of yellow corn meal.

@LadyDuck The plain taste of yellow cornmeal tastes like the white cornmeal we frequently eat. I'm used to the plain taste. We never use sugar. The accompaniment that we eat with it like eggs and vegetables is what makes it sweet.

I don’t know that I could try tripe, but I’d attempt to keep an open mind. There is a Mylotter from Kenya who frequently talks about how much he loves Ugali.

That’s good tripe is so healthy but as a vegetarian it sounds very gross . Lots of things seems that way to me though like gizzards and liver etc.

It's normal not to like tripes. I used to dislike them when I was younger. I didn't like the smell. It's a different story now.

@mildredtabitha I hate tripe and I no longer eat meat. I do not eat meat or dairy. I'm on a macrobiotic diet. My post said when I did eat meat, which I no longer do.

Tripe is not a common thing people eat over here in the USA. But I remember my Granny cooking it for us.

I've never eaten tripe myself. I know when some people here used to cook it they would soak it first and there seemed to be a lot of preparation going on. It certainly has a distinctive smell. We don't seem to eat anywhere near as much offal as we used to. I think a lot of bad receipies and memories of school dinners puts people off - which I understand, liver can be amazing but the stuff they used to serve us at school was horrible. Actually, most of the dinners at school were horrible!

I'm glad to know there are people in your country that eat tripe. Sorry about the bad school dinner memories. School food is never as sweet as home food. We always wash tripe first then boil it for around 40 minutes.
