Paneer with bottle gourd gravy for lunch

Today paneer with bottle gourd gravy was for lunch along with rice, dal and the typical Indian cucumber salad in which we crush fried papad. I just sprinkled some garam masala and kasuri methi to garnish the paneer. Of course I used some fried cashews and poppy seeds while blending the boiled bottle gourd into a paste. I didn't use onion and garlic which was light for my gut. A new way to cook paneer.

Paneer is compressed cottage cheese, almost like tofu, garam masala are a powder of some aromatic spices like, cinnamon, cardamom, clove, pepper, mace, star anisa and nutmeg. Kasuri methi is dried fenugreek leaves.

Paneer in like tofu. Cottage cheese is squeezed in a thin cloth throwing out the whey and then the cottage cheese is kept under pressure. It solidifies. This is cut into pieces and fried and different dishes are made.
