Crafting my simple solo meals at home

I know it's nice to eat with family members and housemates, but some days (or most days) I prefer to eat alone and in peace. I cook food for everyone in this household, including the meals they bring to work and school. I try to make sure that the husband and the daughters get the good homecooked food they deserve. As for me, I eat mostly leftovers and scraps should there be any. On some days, I treat myself to food delivery. Lately, though, I've been enjoying the task of crafting simple solo meals for myself. The cost of food delivery has gone up and so are the cooking ingredients that you would buy from the market or the grocery store. So, I've decided to "treat" myself to the most creative meals I can make out of what's left in the fridge or pantry. Today, I am treating myself to two burger patties with gravy and a sunny side up. I bought burger patties on Buy 1 Take 1 promo two weeks ago and have used up most of them for my daughters' packed meals. I thought to leave two patties in the freezer just in case someone might crave for burgers on a certain day. Now, that happens to be me. Oh, and the gravy is from the emptied chicken drummettes pack and the rice is from this morning's meal preps. All good. Do you also make solo meals at home?

I've never solo at home, there is always at least one person with me. So no I don't.

Well, I'm a 70 year old widow. I do have a roommate and she might cook something and share it with me. The very few times I've cooked I have offered it to her. She sometimes take a meal. Because of my food allergies I try to not eat the same food every day. There are a few I do, but only because I don't have a way to make the meal smaller. Mostly I either just graze with stuff in my room, or make a TV dinner that is safe. Why do I say 'safe'? Well, my worst react is to corn protein, and most TV dinners are not safe since they have corn starch in them. There are some Amy's dinners that are free of corn protein. Oh, and I can't handle spicy foods...

@almostoveryou it is funny, I'm taking a medication that is, apparently, normally prescribed for acid reflux. However, the normal medication for my problem has corn starch, which is my number one allergy. So, the pharmacist comes to give me instruction. "For your acid reflux." "I don't have acid reflux." "You don't?" "I have an ulcer." "Oh..." Having said that, I no longer have an ulcer, but this medication seems to also calm down the problem I'm having with my esophagus, that isn't reflux. Apparently, I'm just put together kind of wrong. The specialist I saw for my esophagus told me to keep taking it...

I'm sorry you've got allergies. TV dinner may have ingredients or preservatives that may do more harm than good. Glad to know you've got a roommate who shares food with you. Spicy foods trigger my acid reflux so I try to manage my intake, too.

@ElicBxn I never knew that antacids may contain cornstarch. Good to know that you got a better prescription for your esophagus issues. I can take any type of antacid, but my preferred brand is Maalox Plus.

I eat brunch so I prepare one for myself. mostly eggs, bacon or veggies

I usually cook the same for us all, I cook only for me when the food is something that the other family members don't like.

I make simple meals for two all the time using up left overs. That is what we had for dinner.

It is a good practice. I can only eat meat/chicken leftovers though. I don't like day-old vegetable dishes because they tend to be soggy already.

Thank you. Some days I really just want to treat myself to food delivery. But the most recent order was awful. The McDonald's fried chicken wasn't cooked well.
