We Eat

In my household, I cook and we eat a lot of one dish meals. It is the only way we can survive these days. The price of food is crazy here. I tend to buy cheap cuts of meat and make dishes out of them that will at least last a couple days. I remember my Mother doing this when she was busting her ass working to support us kids. She would cook a big pot of curry or spaghetti and leave it in the fridge for us to eat when we would be hungry and she'd be at work. These days, I make mostly curries and spaghetti the same. What do you cook ahead of time to stretch your budget? Or do you waste food like?

l live in a separarate household from the main house - it is just me myself and l, unless my son visits from the city. So l can cook when l want to or if l want to. So for many years now l have been cooking one pot meals and storing in the fridge. When l feel like something different, l prepare it. Saves gas and spending time in the kitchen.

You are right about the price of food and I'm always looking for ways to stretch my food budget. I tent to cook meals that have leftovers for us to eat at another time. My slow-cooker gets a lot of use even during the summer months. I'm always looking for sales at the supermarket.

Soups, sauted vegetables with minced beef. These stretch well and can be filling especially eaten with basmati rice.

Even on a budget , we usually have one main dish and a side dish (curry) . But in those days when we can lavishly afford many , there would be more side dishes and preferably meat too

I try to stretch meals with extra vegetables (I figure it adds more nutrition as well). Even with curry and spaghetti, I load it up with extra vegetables (there's always something in the fridge that needs to be used up). I do that with soups, stir fry, and salads too. I love rice, noodles/pasta as stretchers too.

I don't get bother by it coz my mom will always cook one dish that we will eat from lunch to dinner and for the next day breakfast, it saves time and money. As long as its healthy its okay. Sometimes she cooks mung bean with veggies, pork and shrimp in it, and we will eat it for two days. Sometimes we will eat veggies with coconut milk, and shrimp. We always eat with one dish + rice + soup (if ever we have a fried dish) and then we eat fruits after we ate the meal. Since we are short also in the budget my mom will always buy alternative ingredients, instead of meat she will add a can tuna meat. Its okay, as long as we are healthy.

I look for cheap packages on sale like last week found 93% lean ground angus for $6.04 a pack so bought two. Made up one and separated into four meals and froze the other for this coming week. I used the ground beef for two taco salads, a nacho with tomatoes and peppers on black bean chips that have quinoa and flax in them (got on sale.) I'm tired of eating such high carbs I gain weight so not buying pasta now just because it's cheap. Food is so high, I will go without a meal. I'm trying to think of things I can make that are healthier. It's so hard.

I vary rarely waste food. I cook quite a lot of casseroles which use cheaper meats and can be extended with extra vegies, etc. They always last more than one meal so I freeze portion for another time.

We buy hamburger meat on sale, because it can be split and frozen and you can always make something with hamburger meat. With a preteen and a teen, we rarely have leftovers. LOL but I do make big batches of chicken and dumplings, chilli etc.

I like to eat different dish every day. So, I just cook the quantity I need for the day.
